Saffron is a herb which pops up in several different pasta dishes in Sardinia. And these ravioli are one delicious example! Gino and Agata's Agriturismo is called 'Agriturismo Sa Sienda' in Orroli.
For the filling:
5 medium potatoes, a handful of fresh parsley, 1 garlic clove, 1 egg, a generous handful of grated pecorino cheese, a splash of saffron water (about half a teaspoon), a pinch of ground nutmeg and pepper mixed together, olive oil for cooking, salt for seasoning
For the pasta:
500g of semola, 1 egg, warm water
For the sauce:
1 fresh bay leaf, 3-4 fresh parsley sprigs, 1 small onion finely diced, 1 clove of garlic, 500ml passata, a pinch of salt, olive oil for cooking.
