The effect is called osmotic pressure. Wash sea fish in salt water because if you do so in fresh water it draws nutrient's and flavor from the flesh . You can demonstrate this. If you place the fillets in fresh water the water gets noticeable thicker.

Osmotic pressure is the name for the phenonium behind why you wash salt water fish in salt water. Needless information but you now know more than the two guys on the boat . It is similar to how water makers work by a process called Reverse osmosis. If you scuba dive you should also know about the partial pressure of gasses another related effect.
