I just want to let you know that this recipe is amazing. Works like a charm. For the other Europeans here: 2 ounces ~60g. The amounts presented here suffice for exactly 2 soufflés in 200ml ramekins.

Here’s another thing I LOVE about you and your channel! It’s real cooking! It’s not like those videos by Tasty or other short Facebook “cooking” videos. 'Cool as a cucumber' - have I heard this once on Masterchef Junior Season3? LOL Anyway, I love this video so much and I will definitely make this for my family. I used to make vanilla souffle many times but unfortunately they all came out brown after baking. Now I know putting on the lowest rack can get rid of that burnt and also, the heat below is hotter, which makes the souffle rise better! Great tip, Beth!

Beth - I made this delicious dessert today for Valentine’s Day. Questions: (1) My tops started cracking right before they were done baking. What caused that? (2) After 14 mins I took them out of the oven, dusted w/ powdered sugar & opened in the middle w/ spoons as you did. Right away it looked like the batter hadn’t set. I’ve never had soufflé before so idk what the inside should look like. Why did it still seem so under-baked after 14 mins (no, I didn’t open the oven until the timer was done). I will say though that my hubby & I thought it was delicious! The cream was so necessary to cut the richness. I’ll def make again and try to correct any mistakes. 💯

For the souffles, does it matter the shape of the ramekins? Because the ramekins that I have have a little rim around the top, would that mess it up any, or keep them from rising?

Hi Brittany! So glad you enjoy the channel :) OK so for the texture it should be spongey and light, and moist inside. If it's runny in any way then yes it could have been undercooked. Was that the case? :)
