Good to read that you are experimenting with using Parallax Occlusion Mapping instead of vertex displacement, given that Godot lacks GPU tessellation (which is honestly really strange considering that it has been a feature in OpenGL since 4.0 back in 2010). Anyhow, thanks for the video and the addon!

Would it be hard to add wheels to interact with the Environmental Interaction?

Shouldn't be at all, attach the particle emitter to the wheels instead of the player, should be good to go. Could even put a texture of a tire on the particles and have them orient towards the direction of movement to make it look more like tire tracks.
