While it is true that Greeks do like their meat, they traditionally cut out all animal products during Lent and because their love for food is too much to compromise on any flavour, a whole cuisine was invented (aka "nistisima") for the Lent period which is effectively vegan! (with the exception of the occasional sea food or honey dish which you can easily ignore) I've seen a lot of vegan moussakas out there and yours is by far the most authentic-looking! Will definitely give it a try! With love from Athens xx
@RainbowPlantLife2 жыл бұрын
Hi Natalia, thanks for sharing that! I hadn't heard of nistisima, but I am intrigued and will look it up :) I'm glad you're excited to try my version of vegan moussaka!

There’s a great new recipe book out this year called Nistisima! Definitely worth a look. Craving moussaka now, scheduling it for my next day off! ❤
@hyacinthe72 жыл бұрын
That's right, nistísima (νηστίσιμα) are essentially fast-worthy foods. Modern Greek culture being heavily defined by Eastern Christian traditions, our cuisine contains a lot of dishes, savoury and sweet, which are appropriate for the fasting periods, which isn't just the 40-50 days before Pascha, but also the period leading up to Christmas, the Dormition of the Virgin, together with other one-off days.
@jessicawood39132 жыл бұрын
This is true! I lived in Cyprus for 3 years and it was the easiest place to find vegan food everywhere (of course, if you ask the locals for vegan food then they’ll tell you there’s nothing for you but if you ask for anything νηστίσιμα you’ll have quite a lot of dishes to choose from) ❤️

Greek here...👍👍👍 The Mediterranean diet uses a lot of vegetables and fruits. It's very healthy and low budget. Traditionally we eat dairy and meat free foods on Wednesday and Friday. Such as peas, green beans ,veggie staws, lentils,okra , etc We make a lot of pies (tyropita-cheese pie, spanakopita-spinach,...with mushrooms etc) I am a vegetarian and it's easy for me, because there are a lot of traditional recipies. I'm from Romania and we have lots of Greek and Turkish inspired recipes that are considered part of our cuisine. My mother used to make a great moussaka (musaca in Romanian) and those meatloaves (chiftele in Romanian... They might be more Turkish in origin, though). In the winter, she used to make moussaka with potatoes and in the summer time, with eggplants. They were my favourite foods and I miss my mother's cooking so much!

I appreciate that one of the taste testers made both the lentil and mock meat version of your moussaka. The results surprised me, didn't expected people to like the lentil one more.
@RainbowPlantLife2 жыл бұрын
Same! I think it really depends on the quality/flavor of your vegan meat. I tried this with Impossible burger and loved it, but didn't like it with Beyond Burger meat, as the taste was too artificial. With the lentil version, it doesn't taste as meaty, but you know what you're getting.
@elpretender13572 жыл бұрын
@@RainbowPlantLife Interestingly enough, I recall having watched a video of two women who made a "cheap vs expensive vegan lasagna" test. The taste testor was only one guy (not a big sample size, sure) but I was surprised that he preferred the lasagne made with lentils and nuts, even mentioning how that one tasted more "authentic".

That reminded me of your Lentil boglonese recepie, which also scored better than the version with vegan meat (was it beyond beef?).

A good alternative to pre-made vegan feta is to make your own with tofu or a more neutral vegan cheese that you marinade in olive oil, white wine vinegar, lemon juice and lots of oregano. Comes out super delicious and oozing of feta goodness.

I made this dish twice after two other failed moussaka attemps from other recipes. This one is the most authentic and you hit is out of the park with true full flavors, resulting in the most delicious greek comfort food! The bechamel topping seemed a little insubstantial the first time, so I mixed in a bottle of "Just Egg" with your bechamel recicipe and it was even better, fluffy & delicate, like non vegan authernic Moussaka. I love this recipe, but I believe even better now with the tweak. Nisha, you continue to raise the bar in Vegan cuisine, always grateful to You!
