Tug, do what you need to do for your channel, for many people like myself, us old timers understand that this is the way of life. We got 3 flounder over 25 to 32 in and many more that are league in the bay. We rolled 2 large fillets with crab meat and spice's in the oven at 350 for 50 min's and it was the best thing since slice bread. So Tug keep on doing of what you feel is best . I’ve been filleting fish my entire life and it’s still interesting to observe and learn how other outdoorsmen were taught. Tug, keep the vids coming just like you are doing. For those who are learning to gig at night (me included) doing it from a 25 foot center console powered by a trolling motor, is a challenge. Tug (i think) uses a 10-14 foot with shallow draft and uses the gig to pole across 1-2 foot of water. Also, I'm on the Gulf Coast fishing the estuaries...flounder are small inside but hopefully I'll find keepers eventually. Anyone one have experience gigging in Tampa area?

If Crystal loves that corn with the bacon, she should try pan fried milk corn. Cast iron pan preferred, but not necessary, frozen corn (bicolored if you can find it), sugar, salt, and milk or half and half. This cooks over a low-medium heat so you don’t scorch the milk. The longer it cooks that softer the corn and the sugar helps sweeten it while a pinch of salt balances everything out. It’s one of my hubby’s favorite sides! And I have subbed in rendered bacon grease for the butter. Even better! Thanks for the video and recipe!❤

Your blackened flounder looks really good, never thought of that. I'll blacken corvina, tuna, catfish and chicken beside grillin. When I do the chicken I do on high heat for a minute on both sides but I brush the breasts w/ melted butter before seasoning. I transfer to baking pan for 30 minutes @ 350 and after 20 min. I top w/ bacon or chorizo then poor melted pepper jack cheese, heavy cream and butter over top when I pull them out. I use a yellow rice, not a fan of white rice growing up poor, dinner and desert cold w/ milk and sugar. Dam Yankee from PA in 1987.
