Luke, one thing I noticed growing up on MN and coming from a family that did weekly fish fries: we would only eat rock bass in the spring. Toward summer and fall they seemed to always have a lot of parasites (worms) in the meat. Not necessarily unsafe but not necessarily appetizing either. But yes, they do taste amazing!

Good call out there - these had some of those black speck parasites while I was filleting them and although harmless if cooked well, definitely agree it’s kind of a turn off! This spring I’ll have to do another catch n cook with them to see how much better they look and taste!
