The crunchy of Lap Kua is from dried/fried/grinded sticky rice. There are vairants of this menu. Lap kua is northern version, Lap eSan (north east) version. If you eat Lap in other part of Thailand it would most probably Lap eSan.
The crunch in chicken laab I’m pretty sure it’s roasted rice powder, that is the key ingredient of making laab, definitely can’t make laab without it. They will roast in a pan along with some herbs (lime leaves, galangal and lemongrass) until it’s golden brown in color then they will pound it in a mortar and pestle, old fashion way, or use a good blender.

It’s Khao Khua. Toasted rice powder is a common ingredient in Northeastern Thai (Isan) and Lao dishes. We call this ingredient “khao khua (ข้าวคั่ว)” in Thai, with “khao” meaning rice, and “khua” meaning to roast in a pan with no oil. When speaking of this ingredient, dishes that come to one’s mind include larb, namtok, crying tiger, and tom sab. And let’s not forget about the delicious jaew dipping sauce (nam jim jaew) that goes well with just about anything. Although toasted rice powder lends a smoky-nutty flavor and crunchy texture to any dish it’s added to, essentially, it’s just rice - rice that you dry-roast and grind into a coarse powder. As simple as it sounds, you should never omit toasted rice powder from any recipe that calls for it, even if it’s just for 1-2 teaspoons.

You guys are doing our bucket list travel that we (girls 55) are planning to do in 2027. We are all from Laos and will return to Laos as well as Thailand and do the Maldives last. If you like the khan soi in Thailand, make sure you cross over the border to Laos and visit Luang Prabang and try their version. Check out the water fall near Luang Prabang as well as catch the sunset from the top of the temple. Enjoy your travels. Great videos.

I think the crunch that u talking about is rice is call (ข้าวคั่ว ) a rice that fry in hot pan no food oils stirring until it’s has a little burn smell usually put in Laap dish.

The first 3 dishes at 50 baht each is OK. All are my favorite as well. Iced Thai tea at 20 baht is a bargain. It is 30 baht at my housing village and 40-50 in food courts.

I have been to that Temple and others ...... and probably ate at some of the restaurants you visited and also been to the 7/11 you showed! I also explored pretty much the entire inner city inside the Gates! Is there still a small bar there, just outside the walls, west side, that has "the Predator" alien statue made up of motorcycle parts? That was cool! You didn't mention Singha beer! 😱😱.... 🤭 .... I have one of those mortar bowls and use it all the time! I rented an apt just outside Chiang Mai gate for 3 1/2 months ...best experience of my life! I loved Chiang Mai and Thailand! Thanks for the memories! 💝💝 🦂🙏 🍻🍻

Chiang Mai was the capital of the Lanna Kingdom for at least 700 years. Some time the city was independent, but most of the time the City was a vassal state of various Burmese dynasties even right through the reign of King Rama I. When the British began to subjugate Burma and eventually abolished the Burmese King, exiling him to British India during King Rama IV reign, Chiang Mai was independent again but within a few decades, Chiang Mai King saw that Siam was beginning to exert influence to the North, the King decided to submit and even sent his daughter to become King Rama V's concubine. When Chiang Mai king died, King Rama V decided not to appoint a new king but put Chiang Mai directly under Bangkok's rule, sending a governor to govern Chiang Mai since then. Chiang Mai has it all, old town with several important temples, Wat Prathat Doi Suthep on 13 km up hill within 20 km from the city center and at the foot of Doi Suthep, there is Chiang Mai University, one of the four regional public universities in Thailand. The others are Khon Kaen in the Northeast, Burapha in the East (Chonburi) and Songkhla in the South. All four regional universities have all traditional faculties including Medicine and Engineering. There is an going project to propose Chiang Mai's old town as Unesco World Heritage within this decade. Wat Prathat Doi Suthep and practically all temples in the North and in Laos as well have two Nagas (mythical serpent-like beast living underworld) guarding the steps leading into the temple. It is believed that Naga King is the underworld ruler and is a devout Buddhist disciple. Thus, sometimes you can see an image of Buddha meditating under the tree with Naga King guarding behind with his 7 heads above Buddha's head to protect him from wind/rain. There are also standalone Naga statute along Meking River on both sides of Thailand and Laos, the most famous of which is at Nakhon Phanom with 7 heads. It might be noted that one of the largest royal barge of Thai King has 7-heads Naga as its head. The mortal enemy of Naga is Garuda (a mythical flying beast) which is supposed to be God Rama's mount. Indonesia and Thailand deem Garuda as high class mythical beast and Indonesia's National Carrier is "Garuda". Garuda is also the official symbol of Thai King, thus official document would have Garuda symbol at its head. When there is an official royal announcement from the King or Palace, the initial TV screen features Garuda for a minute before the royal text appears together with reading sound.

As for a thai i dont think chiang mai is not known for street food at all. They make most of the dishes sweet but thats not the case when it comes to desserts which tend to be lesser sweet than other regions of thailand. They r known to be a slow life city and a cooler weather city comparing to the other parts of thailand. And as of right now chiang mai is the third worst city for air pollution, pls dont for get to wear ur mask.

Thais can eat very spicy food. Don't order any food spicy with normal Thai spicy level. it is extremely hot and spicy (more than 100 times spicy than tourist can eat)
