@@epicuricloud It certainly was. I made seafood ravioli and it was delicious. Hubby bought me a Kitchenaid artisan for Christmas. Her name is Audrey and I love her. It’s a game changer. Having looked through so many pasta dough recipes on KZbin, yours is far by the best. I live in South Wales 🏴 in the UK and it’s great to know that Kitchenaid is a universal product. I’m just getting used to measuring in cups! Thanks once again ❤️

Hello - I haven't - are you referencing yeast doughs or pasta doughs? Note: whenever you use the dough hook, you're supposed to use speed 2.

I know this was about 2 and a half years ago but, I’m still kicking myself for not buying my Mixer and even the Pasta Attachments sooner then instead of waiting until November 2020. I have the Stand Mixer but I still don’t have the Pasta Attachments yet! 😩

Hi Phyllis - Thanks for the feedback - certain brands of flours and styles of measuring can cause differences. I always make my pasta dough on the dry side (kind of craggily looking) as it tends to thoroughly hydrate more as it rests. And when rolling and cutting you don't want it to be at all wet - especially with the cutting part - you want the sheets to be almost "leathery".

Oil in the pasta dough acts as a shortening and makes the gluten less developed which is what makes the pasta brittle. You should not knead on a flour surface. as you knead the stickiness will be absorbed into the dough. under-kneading is the number one mistake. kneading should be about 7-10 minutes. dough needs to rest about an hour. never freeze the dough. it will make rolling a gooey mess. finish the pasta and freeze the raw fresh pasta instead and cook it from frozen.
