Lish is probably the coolest level 3 chef after frank. She acts and speaks like a regular person, while using her expertise and technique. Does not aim to feel better than everyone else just because of her knowledge. Please bring her more often!

It was very confused. It had a Mexican feel and then toss with basil because risotto is Italian and basil is used in Italian cooking. Also her add butter because it gives that je ne sais quoi? Maybe because it needs it because it was dry and needs the moisture after the abuse she did.

Because Beth is smart and probably turned them down. Every part of Italy has strong opinions on the only correct way to make any dish. Italy is one of the countries famous for barely tolerate a neighboring city's way of doing things. They're also notorious for hating other country's ways with a BURNING passion. Doubly so since she should know how to do it their way. Would not surprise me if she just decided to dodge this, especially since she has her own channel now.

possibly b/c Risotto is more of a Northern Italian dish and Beth makes Southern Italian dishes? I grew up in the most heavily populated by Italian Americans in the US and never saw any of my friend's mothers or g'mas make it nor was it on any of the family style Italian restaurant menus. maybe that has changed, but I think of this as a more technique driven dish rather than homey

The parmesan rinds in the stock is a great call. I save them for when I'm making tomato sauce and they add such a nice salty/creaminess. And yes, they're a great snack for when it's all finished too.

I love the dynamic of John and Lish in this. John with the traditional approach, while I love Chef Lish showing the "once you know the rules of cooking, you can break those rules" in her way of using a different type of rice or creme fraiche instead of butter. Diane's was fun to show the no-stir method and I loved the idea of using summery veg to kind of lighten a typically decadent dish!

John's risotto had too much asparagus in large pieces, Diane's was dry but Lish's was perfect. Risotto is never thick or dry but has a slight creamy liquid as was shown with Lish's dish. I never thought of fennel in risotto, it is a must try.

This "level 2 chef" is a great example of "a little knowledge is a dangerous thing 😂 Sometimes you just have to follow the rules instead of getting cocky and thinking you know better. I still can't believe that she said "looks great" when she unveiled a "risotto" that was dry as the desert, with every grain separated and no creaminess in sight.

I like John's simplicity of ingredients, it's the most relatable to me. I enjoyed Diane's presentation the most, even though I don't enjoy seafood, and I also liked Lish's selection of ingredients and flavor strategies. All three have something pleasing about them!

I would eat them all! I do feel like John made the one I wanted to try the most, I've never had asparagus in risotto before. I am okay with fennel, but I don't love it and Lish (who is awesome, always) seemed to be making a very fennel-forward risotto. The level 2 chef made a dish I would 100% eat, but I agree with everyone here who says it looked more like a pilaf.

On Level 2, it remined me of like the difference between I like for oatmeal while what my younger sister likes for oatmeal. Mines is more creamy/soupy, while my sisters method it's more together and thick. Basically Level 2 is like a thicker oatmeal/porrige the kind that is more solid and less soupy/creamy.

Molten lava is my description of texture at the end adjusted if necessary with stock. I love to make fresh tomato basil risotto using chicken stock. Simple fresh beautiful. Everyone adds flavors they like. These did not appeal to me but they like them so it’s ok. Way too much fennel for me. No stir = not risotto to me. Just flavored rice. No need to constantly stir though, a little after stock is added, increasing when it is ready for more stock.

I'm not a vegetarian, but I smile every time I see a chef doing a vegetarian take on a dish that usually uses some kind of meat or fish. Ah, John, you and your store-bought broth. Never change! Unpopular opinion but Diane made Risotto, it's just different. Obviously I'd put in my aromatics first since that's where the flavor base is, but she did a fine job. Also she used shrimp and I love shrimp. That being said, Lish's use of scallops makes me want to try hers super bad. I haven't had scallops in forever. All three chefs are way ahead of me, who would just use basic white rice.

As a Pro Chef with over 3 decades experience, I liked the style of Lish Risotto the best as it was the classic style I'm familiar with, but I'd prefer to have the Mushroom and Asparagus with the Scallops for my personal taste. I've always added a touch of color by browning my rice a touch, never knew it was a thing.🤷♂️ I've never used Parmesan Rinds like Lish did in her recipe. Has anyone else used them in the same or similar way? Just curious as to what it adds to its flavor profile to anything you'd use it in.
