Problem is that HEAD is PART of the beer. If you measure the first segment of your finger and then half way down the next segment, that is the proper amount of head on a per pint basis.

A properly mixed martini is not pure booze i.e. gin or vodka; it's supposed to have a substantial amount of vermouth, sweet &/or dry. Many people, including most bartenders, think an "extra dry" martini has little extra dry vermouth, which is false, and is not even a martini. Order what you like, but don't call it what it's not. It's like a lady pledging her betrothal to her pet lobster, or a fella to another fella. It is, indeed, a type of union, but a human marriage (which, funny enough, just happens to be an ancient wine mixing term) is something else in particular.
