Well 1500 dollars for a countertop burner, it's no different than If I was to have Wilson Combat trick out a Glock 19 for me, or One of Ernest Langdon's Berretta 92 or PX-4 compacts. if it's something you want well then buy it and don't give rats damn on what others may or may not think or say about it. I just looked it up on Amazon$1409.13 out the door with tax ( I am in CT 6.35%) and shipping. Not terrible, not cheap either. 1400 dollars is only about 2550 rounds of 9mm if you like to shoot you can go thru that in a couple of months or sooner if you complete in some of the target matches. I expect something like this burner would last for years. And think of cooking that fish!

It's a restaurant grade induction burner with a couple feedback sensors (one in the burner surface, another as an optional probe you can put in liquids) that you can set to any temperature, down to 1 degree F resolution and hold there indefinitely. It is a cool piece of equipment, just beyond the scope of most home cooks. Search for: Breville Polyscience Control Freak Induction to find out more.

I believe in Arkansas you won't find fresh ocean fish. The fish will be frozen at some point. If you want to pay exorbitant amounts of money, get a charter to fly it In packed in dry ice. I feel sorry for you. I live in Ocean County, New Jersey. I can go to the docks and get fresh fish off the boat.

I made sole meuniére not too long ago, couldn't find sole specifically but used Halibut (filets) and it turned out just as well. The browned butter and lemon seal the deal. Beautifully crispy and the fish is tender and sweet. Whole sole ia traditional but any flaky white fish (filet or whole) is fine.
