Why go through all the trouble with adding the eggs and heating etc..? Why not just a straightforward coconut ice cream in the ninja creami?

You could do that too. The heat isn't just for egg tempering though, it also helps the protein mix without clumps and dissolves the sweetener really well so you don't get any grainy textures in the ice cream. Definitely more work, but it's worth it to me.

Hi Joe, I made this recipe tonight and after putting it on lite ice cream mode and processing the full container it had a very liquid consistency, almost like a milkshake. I tried to put it on respin but that did not help. I froze the container for over 24 hours, but I did let the container sit out for about 20 minutes to thaw before processing. Do you think I let it thaw for too long or any ideas why it was not a thick consistency? I put it back in the freezer again hoping to see if it works out better tomorrow.

I think 20 minutes might be a little long to sit out in your case. Maybe 5 minutes next time to see what happens? The humidity in the air where you are had a pretty big effect on that too.

I'd probably stick with the rum. It adds a really nice little accent to the flavor... And you get tons of coconut flavor anyway. The coconut extract might actually make it tooooo flavorful if that's even possible.

What a lovely recipe. You can tell just by looking at the finished product how creamy it is. I love coconut and am thinking about using coconut extract to boost the flavor. Do you have any experience with that? Although you did not mention it, I noticed you kept your ice cream scoop in a container of water. What a difference that makes! 1 1

Thanks James! The coconut extract might might the flavor too powerful. Its already really full flavored. If you're really into coconut, it might be pretty neat though. You noticed the water! Yeah. I keep the scoop in a cup of hot tap water. It helps the ice cream come off the scoop really smoothly. Also, it the ice cream were a little harder, you can slice through it a little better that way. Not so much a problem with the creami so much though.

My grandparents had a store with an ice cream fountain. They always kept their scoops in water between uses. I remember when I was little and allowed to serve (a few) customers. This was during the 1950s. After making a few ice cream cones for people and them returning to complain that the scoops were hollow in the middle (I was too short to make a tight scoop), I was banned from preparing ice cream cones for customers. But imagine the fun I had making my own. @@JoesPhenomenal

The amount of processing time is different, and I think the spped of the shaft movement and blade speed are a little different as well.

I usually do stuff with eggs in it, so you have to heat it to temper them. Protein powder mixes easier that way, too.

I get ya, Acid. On this one, you can just leave it out, and add an extra 1/2 tsp of vanilla extract and you're good to go.

Exactly,.I'm so torn with trying to figure out the what & why do the protein? Sad to say I don't work out much, and concerned the protein is gonna turn me fat, also irritate my body. On top of that, I can't afford it. Good thing, The recipe guide doesn't mention protein. So just know, all this protein talk could just be for clicks, for the meat heads.

@honeybuzzard2843 you can always just leave it out. It doesn't change the flavor very much, and is juts there to bump the protein content up a little. Also, it doesn't add a bunch of calories either, so you don't have to worry about weight gain... Unless you eat tons of it.
