Beautiful. So beautiful. I used to be a barista and the thing I miss most is making lattes for myself. Grinding the beans, tamping, and watching the espresso flow out perfectly, steaming the soy milk with just the right amount of silky foam, and making latte art with the final pour.

Graestra A proper espresso machine costs a lot. But home brewing with mechanical devices is possibly even more satisfying and experimental as a morning ritual, costs a small fraction, and takes less space too. You should try it :)

I've been using my La Pavoni since 1985. She's a lovely testament to Italian craftsmanship. The antithesis of today's automated, computerized machines, making the perfect espresso is best done by feel. I listen to her hiss when she's ready, and draw a wee bit of warm water to warm the pressure head. I can feel when all is right. I grind the coffee by the sound, and the reassuring look of the powdery goodness that gets tamped just so. The sound of the gurgling water lets me know when it's time to pull the shot. If a wee bit more is the order of the day, a brief rise of the handle adds that touch. Ah, the feel of the solid press of the lever. The smell of the espresso. Bliss. I cannot second guess everything using a digital scale. It's not time to do lab work. Is time for a savory taste of that lovely crema.

amazing quality video! BUT IMO you should dose more, about 15-16 grams, also IMO your grind is too fine and you putting too much pressure on the lever (you shot time is about 50 seconds instead of recomended 25-30), also dont forget if you'll dose 15-16 you'll need to compensate the grinding size ever more! I've also notices bigger bubbles in the creama, that is sign of "too fresh" (still degassing) coffee, I'd recomend useing coffee in 5-10 day after roasting range! good luck!

I was just about to say to post a vid about espresso but you beat me to it XD Being a college kid really makes me tight on the money so I can't afford those fancy gadgets. However I do want to learn how to make all types of coffee beverages :D It'd be cool to see the manual (cheaper) gadgets into action too. I try to learn how it was done before actually getting automatic stuff that cuts down on prep time and what not. I'm thinking of getting a moka stove top to make (almost there kind of) espresso and get a milk frother too! Love what you do! Keep at it! Awesome video but try to avoid knocking your basket- it can cause channeling due to crack's in the puck. Also why remove the basket? You can do everything with the basket in the portafilter :)

Eccellentissimo! One dessert you can make with espresso is Affogato. Scoop ice cream of your choice, into a cup, add a shot of hot espresso over it...Finito, dessert!

I saw that you measured the beans and loaded them in the grinder - did you calculate for the loss of ground coffee from the burrs to the shoot? Or does mazzer mini have no loss there? Also, I've read that tamping the side of the portafilter basket after you tamped will create micro-fractures which them creates channeling (water always goes the way of least resistance) Nice video!

Agreed, and also after the first tamp, you knocked the side of the basket and that creates unwanted crevices in the coffee bed, which you can't fix with a second tamp because it's not enough pressure?

Your video is inspirational. Quality espresso is hard to come by and it looks like you can make it. My set up is very similar to yours. But I feel as though your grind is finer at a 3.7 then mine is at a 2.7 and I feel that my machine would not provide a suitable grind at that setting. What coffee are you using if I may ask?

Tsyska Ram unfortunately I've never used A Gaggia and a Rancilio, so I can't give you any advice. But do you watch videos from "Seattle Coffee Gear"? They upload lots of videos of coffee equipment. I think you can find information you're looking for in some of their videos:)

Great video! Yeah I think your grind was definitely too fine - you seems to put a lot of course into it long before getting any liquid. Oh my (identical) machine that wouldn't be a great. But it's part of the whole fun, you get the dial it in and make the shot you want to make... Just for you... I tend to grind a touch coarse than yours, pre infuse for longer, and let in just a touch more water for roughly a 30g shot. Thanks for sharing!

Few advices from fellow barista :) -Not a "little too fine". That grinding is way too fine for italian style. Brew-time should be about 26sec. It was 'bout 42. Nothing good comes from brewing the coffee for too much time but incredibly bitter taste. (But for a 25ml ristretto it'd be almost perfect). -For compressing the coffee try to use a mount and try to make it in a comfortable position. The pressure itself will come from experience, so you don't have to do it all the time this way :) (that way it is way faster) -Crema seems a bit too much for me in full city roast, but afterall it is okay. If it bothers you, try to use monoarabica (I recommend Ethiop for this style) :) Have a great time making coffees! After tamping once, disturbing the coffee puck and tamping again will result with cracks in coffee puck. And of course channeling will occur. If naked portafilter was used, some spraying of coffee would be observed. Never disturb coffee puck after tamping.

David Li tamp was too hard and excessive and his output was a bit low for a double unless he was shooting for a ristretto. Plus the pull time and pre fusion were long.
