I tend to sharpen one side of the blade until you can feel a bur has been raised on the opposite side, then switch sides after that to form your apex. After that, use progressively finer grits to start to remove that bur.

"You never go full dull!" -Robert Downey Jr. Tropic Thunder, kind off. You alluded to it but didn't seem to mention it directly: you do not have to go the the coarse grit every time if you keep your knife honed and never let it get completely dull.
