This is Culinary Futurism. Filmmaker Dustin Nakao-Haider follows Chicago-based chef Ethan Lim as he creates vibrant dishes inspired by the rich, complex history of Cambodia. Drawing on his family’s culinary legacy of over half a century, Lim’s award-winning cooking imagines how Cambodian cuisine might have evolved had the civil war not paused its growth.
What happens when an artist holds up a mirror to the world? In the Making, a documentary shorts series from American Masters and Firelight Media, follows emerging cultural icons on their journeys to becoming masters of their artistic disciplines. Across seven episodes, meet creatives who are making work that explores and influences American culture today.

Firelight Media is a premier destination for non-fiction cinema by and about communities of color. truly amazing and well crafted documentary i can feel the emotions just watching this, growing up knowing our elders have lived thru such tragedy knowing some family are still broken due to what have happened pains my heart. Being the next generation of the Cambodian, nothing makes me more happy then seeing us khmer reunited and rebuilding once what we have lost. Proud of you for representing our culture, Thank you Ethans.

Congratulations Ethan Lim. You have made us Cambodians proud. It is true that the Khmer Rouge took away many talented and intelligent Cambodians' lives. But our legacy continues forward due to the ones that did managed to survive and even thrive moving forward. You are a prime example of the new generations keeping the tradition and legacy of the Khmer people intact.

Beautiful story and what an awesome video of your journey and way of experiences. Art and culinary is not entirely gone. Many that escaped they have taught them to their kids and grandchildrens. I am one who teaching my kids and hopefully to grandchildren as well in embracing our food. Krueng and prahok no one can take from us because its in what we’re taught for many generations. Sending lots of love and support.

This is incredible! I bet his ancestor and his parents are very proud of him. I totally get what they have been through, but to keep the traditions alive is not that easy. I come from a Chinese Cambodian family background where ancestors and family were chefs. Chinese Cambodian cuisine is so delicious. It is hard to find authentic Chinese Cambodian foods in the US depending on where you live.

Born and raised in the western world but my roots are from Cambodia. I’m a foodie and have tried almost every cuisine on the planet during my travels. With that being said, there is only one cuisine that I always crave no matter where I’m at in the world. Cambodian food is indeed the most underrated food in my opinion. I can go without many different types of food except Cambodian food. I would drive hours away just to access Cambodian food. It’s a taste that stays with you. Authentic Khmer (Cambodian) cuisine there is nothing like it. My last meal on earth would be a Khmer meal.

Is there any real Cambodian cuisine at all or they just stole Vietnamese cuisine 100% and some from Thai cuisine and just claim as theirs by changing the name. like Banh Mi, and Banh Tet. Cambodian don't use chopsticks

Cambodia, back then was called something else and gone through different names during different eras, existed long before Thai and Vietnam were ever on the world’s map. It is a country that has been diluted by Vietnamese, Thai, and Chinese so the cuisines would have those influences.

​@@mikewhocheeseharry5292 all lies, Khmer only existed in 1100, and it is a hand eating culture country, not chopstick. Vietnam is the third oldest country on this planet. Google it!!! Did Polpol really destroy all intellectual people in Cambodia leaving a clueless new generation that knows nothing besides drinking beer and making false claims. The entire Vietnamese cuisine cookbook is being clone by Cambodia. lol

@@chanpunleuthorn5815 I know alright, After Vietnamese liberated Cambodia from Polpot, the entire country was back to the stone age without anything left. No skill trade people, no cuisines so Too many Vietnamese came over with skill to help rebuid the country and the Vietnamese brought along all Vietnamese cuisine but now Cambodian claim them all. Even the Vietnamese world famous Banh Mi and Coffee. lol

So what you saw in the video “Kroeng” and “Prahok”. Does this exist in Vietnamese cuisine at all? Banh Mi is brought over from France and also the first coffee plantation in Vietnam was done by the French. Bread was also introduced to France’s colonies which included Laos and Cambodia, thus these countries also make bread sandwiches. Why troll around like this buddy.
