I’m having a hard time learning to make injera. It turns out soggy and dense. I can’t find a good video like this in English. Can you give a short summary of the process in English? What does boiling some of the batter and mixing it back in do? How long do cook after you put the lid on? Do you turn off the mitad after the lid goes on?

Boiling the batter as she did helps injera to stay soft for longer.

By the time you put the lid on the injera is almost already cooked so the lid goes on for 12 to 15 seconds I'd say. The lid helps to further cook the top of the injera, plus the injera will have cracks without the lid. Do NOT turn off the mitad between injeras....it will kill the cooking process. The most you should do is control the temperature by turning it up or down as needed until you find the right temperature. Hope it helps😊
