Here's the breakdown: SOJU: Rice is steeped, koji mould is added to convert the starches in the rice into sugar during fermentaion, and the solution is left to ferment. After the fermentation process, the alcohol is distilled and diluted until it has reached the wanted dilution. And according to popular sources, it's been in production since the 13th century, (1200s), and was distilled using earthenware such as clay, or iron cauldrons. SAKE: Same as soju but they do not distill the alcohol. They ferment the solution until approximate ABV of the liquid is reached. And sake supposedly dates back to the 5th century, (400s). EDIT: During the sake making process the rice was steamed instead of steeped, credit to @nugget2366.

They didn't stop drinking rum in the navy because sailors got drunk. They mixed water first with rum since alcohol kills bacteria then lime to prevent scurvy. Once they were able to keep clean water and food with all the nutrients the sailors needed there was no reason to keep drinking rum.

I have read that they used rum to get lime juice into the sailors. LIme juice was supposed to prevent scurvy. But the way the Brite preserved it would have destroyed the vitaman c so it would not have worked.

Little bit of info. There's many types of agave distilled spirits. Tequila, mezcal, raicilla, sotol (agaveish) and many more. All of them using different plants and methods of cooking the agave.

In Mexico, there is also an alcohol called “pulque” Whitish colored drink that is rooted back to the Tlatoani’s that defeated the Spanish Conquerors in Mexico. Currently, it’s often mixed with fruit to add a better taste and flavor, but it is one of the most cheapest and inexpensive types of alcohol in Mexico that any alcoholic can buy lol

Fun fact about the seafaring days: They took Water, Beer and Rum onboard when on longer journeys. Water spoiled first so it was consumed first. Beer second and you know where this is going. Imagine having a 3-week rum bender behind you, and waking up in the morning in the worst hangover in your life. All you can drink is either rum or seawater wich will kill you. Yikes

Get your research on Absinthe together, man. It contains a chemical called Thujone which actually acts as a hallucinogen but also comes with other bodily and psychic damage as it is a very potent nerve poison aswell. todays absinthe has that Thujone amount regulated though which is why the hallucinogenic effect is strongly inhibited if not diminished nowadays. although back in the day it was the unigque selling point of absinthe in the height of its popularity

The purpose of the agave worm was to prove that the spirit was over 50% alcohol. If it preserved the worm it was over 50%. If the worm decomposed, it wasn't. wormwood (artemisia species ) was used to *treat* worm infestation , hence the name. Supposedly it paralyses the worms so they let go of your intestinal wall, and you can excrete them. it has a bitter taste, and may be neurotoxic in large doses or over long periods of time. absinthe was also 70% ethanol- pretty neurotoxic even w/o wormwood.

I want to add another sugar cane-based spirit not mentioned here, Cachaça. What sets it apart from Rum is that it’s made from the raw sugar cane juice, whereas Rum is made from molasses which is a byproduct of sugar production. Cachaça is also a spirit that can only be produced in Brazil, just like how Tequila & Mezcal can only be produced in Mexico, and how Bourbon can only be produced in the U.S. Also, you forgot to mention Extra Añejo tequila which is barrel aged for a minimum of 3 years. And technically Tequila is a type of Mezcal that only comes from one region of Mexico, just like how Cognac is a type of Brandy that only comes from one region of France.
