Healthy Morning Muffins
(adapted from a Martha Stewart Recipe)
1 1/4 cup gluten-free flour blend
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1 cup gluten free rolled oats
1/2 cup raisins
3 Tbs olive oil
1 egg
2/3 cup whole milk
4 medium carrots, grated (about 2 cups)
1 medium ripe banana
Preheat oven to 400 degrees F. In a large bowl, whisk together the Gluten-Free Flour Blend, brown sugar, baking soda, baking powder, cinnamon, nutmeg and salt. Stir in the oats and raisins. Add the oil, egg, milk, carrots and banana and stir until combined. Divide batter into 12 muffin cups. Bake for 23-25 minutes. Allow the muffins to cool for 10 minutes. Enjoy!

Having just sat down with a coffee after a very wet and windy walk with the dog in Scotland it was lovely to find this video. It was so relaxing to watch. Austin really made me smile I have a black German Shepherd and she is never far from my side when I'm in the kitchen. She loves her bits of carrot or cheese. Like you, my conservatory doors and front windows are always covered with nose marks. I swear Scout watches me clean them then deliberately makes fresh marks. Thank you for sharing x

Challenge accepted!! My garbage bin is the same as yours (2 together) and they were sadly neglected so I thought I would challenge myself to see how long it took me....18 minutes! But they were really bad and I did have to stop and put a bandaid on my reluctant teenage sons sore finger! So that took some of the time up. 🙂 so good to have it done. Thanks for the great recipe and the reminder of how we blow it up in our minds how long something will take to accomplish when really it's about 5-10 minutes. I’m interested in the Ninja toaster oven. I have an air fryer but would like to have an appliance with multiple uses. Not fond of clutter on my countertop, but if it’s crazy useful it might be an exception. Maybe future content? There's a special trick to peeling eggs flawlessly. You use the edge of a spoon to create a crack around the middle of the egg shell. Then use the spoon to "scoop out" the shell and it comes out in one piece. I learned that from an old episode of Emeril Lagasse 😁👍🏼

Ooo, thanks for the muffin recipe, Robin! I was just thinking about switching things up for breakfast. During the summer, when the teens are home, boredom and "there's nothing to eat" as they gaze into a full fridge happens fairly often. After doing my eggs in the instant pot I also shock bath them and then just roll them on the counter with slight pressure causing them to crack and they slip right out of shell. No picking hard shards of shells, incredibly easy.

To easily remove the shells from boiled eggs, add about 1/2 teaspoons of salt per egg to the water. My husband’s grandmother first told me this trick, and a professional caterer also told me about this! Works every time!

Hi Robin - Such a great idea for a video. It will make me rethink some of the things I put off. Thanks. We just returned from visiting Melissa in Dallas which really helped. I sent you a comment on your Thursday video about salads telling you about my health issues but I dont see where you read it. Basically all of a sudden I started seeing every thing double. I went to my neurologist and he said my Myasthenia Gravis is progressing faster than he had hoped. He put me on some meds in addition to what he already has me on in hopes of slowing it down. No guarantees if my vision will return to normal. It makes everything so challenging and I can not drive. I am going to see my eye doctor because they may be able to put a prism in the lens in my glasses that might help. I am wearing a patch over one eye just at home that helps me not to see double with makes me dizzy some time. Anyway, prayers would be appreciated but I trust the Lords will for my life. He is where the joy is, right?

The muffins look delicious! You're too funny really! I couldn't figure out what Austin had done....LOL....I had to rewind and watch again! You would be asking "why, why, WHY!!??" every day if you had my dogs.LOL I know I do! To be fair one is a 9 week old Goldendoodle but still..."WHY"??!! Why did you slobber on the couch, Why did you steal the bath mat and chew and slobber on it?, Why did you just relieve yourself on the carpet when you JUST came inside??!! Why is your food scattered around the kitchen floor? Why are you chewing the steps? Etc...LOL Every single day! But both my Goldendoodle Girls (one is 9 weeks the other is a year and a half ) can get away with it because they fill our life with such joy and happiness. Austin is a good boy! And you're a good puppy mom!

I love that egg holder! I boil eggs about once a week as well. Makes it so easy to whip up a single serve egg salad for my girl, put on a tossed salad, or just eat with a salt shaker. We have chickens so I'm constantly having to find use for the eggs.

Oh yes we used to have nose prints from our little dog. Now its finger prints from our twin granddaughters. The muffins look very good. Will have to try them. I was wondering how the air fryer, toaster oven was doing. My husband and I have discussed them Thanks for the video. Have a great week

Love your vlog. I want to share with you an egg peeler that is on Amazon that really is a fantastic tool. The eggs always come away from the shell. Go on Amazon and give this little gadget a try. You drop the egg in and roll it around and the shell is removed immediately. Hope you like it

I never thought of making hard boiled eggs and keeping in water in the fridge. I really enjoy an egg sandwich. Thanks for the good idea. I always have pickled eggs on hand in the fridge for snacks but never thought they would keep in water.

Hi Pauline! I keep them in a jar- no water. I just rinse them and dry a bit. They are usually eaten in just a couple of days, but they store well this way. 💙😊💙

I do my instant pot eggs on low pressure for 6-7 mins quick release depending on if I want the yolk just a little soft or not. I always use a separate bowl for my ice bath so next time I will do it the way you did - one less pot to clean
