I love doing a roast chicken when I have guests over! They’re always so impressed but it’s really so simple. I use the spatchcock method for the most crispy skin and quickest cook time and I save all the backbones for my stocks.

I have roasted at least 100 chickens over the years, chicken quality does make a huge difference. Air chilled chicken never fails in delivering the most tender juicy roast, the texture of the white meat's pleasantly different, air chilled chicken does cost more but worth it.

Thomas, you are an excellent teacher and I so appreciate that your videos are always focused on the food and the techniques used to prepare it - not on you. I’m tired of the cult of personality that has taken over cooking videos and rendered the food secondary to the people preparing it.

I roast a chicken every Sunday for my weekly meal prep. I’m able to buy a whole organic chicken for less than a pack of regular chicken breasts. It lasts me most of the week. I save the bones, giblets & back if I spatchcock for broth in the instant pot.

Nice job Joseph. I would suggest preheating that cast iron before adding the bird. It’ll help the thighs, which are under the bird, to get to temp

The older the chicken the better its ability to hold on juices, and the meat have more flavor I usually make chicken soup using a really mature chiken, it usually come from a hen who couldn't produce egg daily anymore, it really gives the broth so much flavor, and you can't really overcook it Usually the breasts of a regular chicken that have been cook that long will have dry and grainy texture, but that wouldn't happen with a really mature chicken

Salty then leave in refrigerator uncovered overnight...let the salt have time to work - dry brine.

High Blood Pressure, cannot use salt. I use No-salt Kirkland Seasoning instead, plus lemons. Mmmm😉

Or use liquid aminos. Makes a great seasoning and is a great alternative to salting.

YEP Good technique but pink on the inside. That high temp will nicely brown the outside - let's all say - salmonella. My grandma taught me, 350-375 1hr- 30min covered 30min uncovered and when poultry is done the legs naturally gap open. That has worked for me

The kinds of choices in chicken you describe were ubiquitous when I was young, but when I go to the grocery now all I see is "chicken" I don't have access to a poulterer so I'll just make the best of it.

The meat and skin on the underside that Thomas cut off is actually really good eating as well if you like to gnaw on the bones.

Right behind the thigh's on the back are the oysters. An incredibly flavorful and tender piece of meat. They are rarely served and often referred to as the chef's reward.

Just cover it with a plastic foil and you will be good to go. And also don't store it next to cooked meats

that low amount of seasoning and butter will make the chicken bland and fatty. i prefer spicy chicken so i usually marinade my roast chicken in chicken tikka marinade for 12h and then cook on high heat for an hour.

Love your videos but are you aware that you contaminated everything you touched with your chicken hands? Like the rest of the herbs, rest of lemon and garlic, siccors, twine?? I never touch anything else with my hands when I have touched meat unless I throw it away afterwards or can wash it very well.
