Gelatin can be strong or weak: from 120 to 240 bloom. The greater the strength of gelatin, the more it gels and vice versa. For example, the recipe gives powdered gelatin 220 Bloom 8 grams, and you have sheet gelatin 180 Bloom. Divide 220 by 180 to get 1.22. We multiply 8 by 1.22 and get 9.7, round up to 10. You need to take 10 g of sheet gelatin.
