Hi Kristin I was wondering if you could make a video on a scaled down version (for 1-2 people) of your boba syrup solution(the syrup you put the boba in after cooking) as well as a tiger milk without using AIO

Hello 👋🏻 I think the best option for a syrup solution for sweetening drinks and such is a 2:1. Usually white sugar. (Two parts sugar to one part water.) Heat it up and make sure it's fully dissolved. But for a brown sugar, solution... It's a bit more difficult. But either way, a 4:1 or 5:1 ratio or more. It really needs to be thick. I err on the side of making sure it's super sweet opposed to not sweet enough. The longer the heat... The more the water will reduce and the liquid will be more thick and viscose. But not too long or high... Or it will cook to a candy after it hardens. It will take a bit of time to figure it out completely... But trials and time are your friends! 😁

Yes. Any powder milk tea you can make in advance, AIO or normal powder. Best if you keep it in a refrigerated churning machine though for a shop, or find a way to stir it before serving for an event... Because it will settle in the bottom of the container, no matter how hot you get the water to melt to powders in the beginning. 😅

But in the meantime, a basic answer is go for 5 of each flavor milk tea and fruit tea and maybe one or two other categories... And build upon those over time in flavors and styles. Another great, detailed, fluff-free video, Kristin. One thing that seems to often be overlooked is that "non-dairy" creamer isn't dairy-free. It's called "non-dairy" because the dairy industry doesn't want it to be labeled as "dairy". It's almost always lactose-free, such as coffee-mate, but not dairy-free, because it contains caseinate, a protein byproduct of milk. Therefore a cafe that uses AIO cannot offer vegan or technically even vegetarian drinks. I feel that bossen incorrectly labels their AIO powders as "vegetarian" when they're really not.

Hi Kristin, do you have a favorite online retailer for non-AIO powders in USA? Also, do you have a favorite online retailer in general for boba tea supplies? I totally understand if you cannot answer this question for product endorsement reasons.

I have heard that many shops are transitioning away from using powders for milk tea drinks, because the powders make the drinks taste "cheap". Instead opting to use syrup or real fruit puree with whole milk or vegan milks such as soy, almond and coconut milk? Have you witnessed this? If so, how do you feel about it? Can the blended frappe type drinks even be made without powder?

Hey MHL. Thanks for your comment. The way I see it is that everyone is entitled to their own opinion when it comes to bubble tea. That's one thing that makes the drink very unique is that it can be made in thousands of different ways and still be called boba. In the West, countries such as America, Europe, etc, we have the luxury of changing bubble tea to be very unique in terms of using fresh ingredients, fresh milks, fresh fruit from around the world. But in a lot of other countries they don't have this opportunity, and so understanding how to properly use powders is the best bet. They may not have refrigeration or access to fresh homogenized disinfected milk. And yet why should they not be able to enjoy bubble tea? Having grown up with Boba drinks almost my whole life, it's only been recently that there's been a transition to fresher products. And I think that over time with all the trends, this will start to be the way. But for now I would say it is still a very high percentage of companies and businesses around the world who use powders.

@@BubbleTeaKristin Thank you for the amazing response. I tend to agree. I think the fresh fruit is a health fad, but deep down inside, most people (including myself) like the creaminess and richness of powdered drinks. And I'm not going to pay $3 extra just because it's fresh fruit.
