Today’s video is this wonderfully chaotic and fun what i eat in a week, featuring vegan travel food moments in Nice, France; cozy Berlin cafes and lots of quick, easy and healthy homemade meals. Gochujang Fried Rice, Sweet and Sour Veggie Noodles, German Style Banana Pancakes and more! Also I’m trying to make Avocado Iced Latte lol.

INGREDIENTS + NOTES:
#1 Savory Oats with Aubergine Miso Topping
for the oats:
⅔ cup (60g) rolled oats
a generous pinch of salt, or more to taste
about 1 tsp chia seeds
1 cup (250ml) water
1 tsp olive oil
1 tsp white wine vinegar
for the topping:
½ aubergine, cut into cubes
vegetable oil for the pan
1 tbsp miso paste
¾ tbsp cashew butter
1 tsp white wine vinegar
1 tsp soy sauce
¼ cup (60ml) warm water, more if needed
Also cucumber, parsley, spring onion etc if u wish
→ Serves 1
#2 Sweet & Sour Veggie Noodles
for the veggies:
1 small sweet potato
½ aubergine
1 zucchini
1 bell pepper
1 tbsp oil
generous pinch of salt
3 blocks of mi noodles (190g = 6.7 oz)
for the sauce:
3 cloves garlic
30ml soy sauce (2-3 tbsp or 1/8th cup)
1 tbsp ketchup
1 tbsp white wine vinegar
1 tsp sesame oil
3 tbsp water, more if needed
1 tsp cornstarch
if needed: additional salt (taste test after combining sauce and noodles)
additional toppings of choice (sesame seeds, tahini dip, spring onion …)
→ serves 2-3
#3 Banana Pancakes
1 medium ripe banana
2/3 cup oats (60g)
1/4 tsp salt
2 tsp chia seeds
1 tbsp cornstarch
1/2 tsp vanilla
1/2 cup plant milk (125ml)
1 1/2 tsp baking powder
1 tsp white wine or apple cider vinegar
coconut oil for the pan (light grease is enough)
→ yields 3 large pancakes
#4 Gochujang Fried Rice
for the tofu:
1 block tofu (200g = 7 oz)
½ tbsp gochujang
2 tsp sesame oil
1 tsp white wine vinegar
2 tsp agave syrup
3 tbsp soy sauce
about ⅓ cup (40g) cornstarch
2-3 handfuls of unsweetened cornflakes
1 bell pepper
2 cloves garlic
1 tbsp veg oil for the pan
3 servings cooked rice
(i cooked up 180g dried rice for that)
Finely crush the cornflakes, the smaller, the better they stick to the tofu I have found!
It's best to add the cornflakes in stages to the bag / bowl, one handful at a time, so they won’t get super soggy. So cover 5 - 6 tofu bites, place them onto the baking sheet and then add a fresh new handful of flakes to the bag / bowl. Crush them up again, then add the next batch of tofu bites and so on.
Some cornflakes are going to fall off when placing the bites onto the baking sheet, but that’s okay!
If there is not enough marinade left frying the rice, feel free to make some more! maybe about half?

You have to try a very typical spanish breakfast, it’s so easy and delicious. Just toast up some white bread or baguette (has to be crispy on top). Put some olive oil on top of the bread. Then you just have to puree some tomatoes (cherry tomatoes are more flavorful) and ad it to the bread with some salt. thats it. So yummy

Pan con tomate is sooo good! You should also rub some garlic on the bread first and then use a box grater to grate the tomatoes :). Start by toasting baguettes sliced lengthwise. Then toast in the oven a bit. Rub some garlic on it, add your grated tomatoes, olive oil and sprinkle some salt, delicious!

I had that on a visit to Brihuega and had to ask the house lady to not add Jamon. She found it weird but gave me the tastiest tomato toast! Found it weird for breakfast but ended up loving it 😊

everyone's providing breakfast toast combo ideas so here's my fav!: toasted sourdough topped with hummus, sliced cucumber, a little bit of salt, and chili flakes. so simple and delicious!

I like that you're honest about adding the green food color (at around 16:00-ish). It made me kinda grossed out bc for some reason food coloring grosses me out, lol, but then I realized a lot of people probably add food dye to their finished product but don't tell people, and then people like me wonder why it isn't as vibrant. So good on you.

I love the vibe of your videos, they’re always so relaxing and cozy! Btw I have a little breakfast suggestion! Toasted bread, hummus, thick tomato slice and an iconic olive oil and balsamic glaze combo + salt and pepper and perhaps some basil. It tastes especially good now that tomatoes are in season.

Dandelion is indeed super healthy, but it's best when you harvest it in spring because it isn't so bitter yet :D. However, you can also blanch them to reduce the bitter taste🌼

2:36 there is a very big possibility that it actually was not vegan... I was in France the last couple of days and, more often than not, french people have a COMPLETELY different understanding of the word "vegan" than us Germans. I was in Strasbourg the other day and there was an advertisement about a vegan plate in this restaurant/bar, so I asked my father (who speaks french) to ask the waiter what is in it. He said quinoa and burrata 😭. In Bordeaux, a pizza place said they have vegan pizza and showed me the vegetarian one on their menu, in Paris, when I examined the menu of a cute little bistro, they had a little sign for everything "vegan" on their menu, and marked meals that cleary had egg or dairy in it... The struggle of being a vegan in France is real haha. I have been in Barcelona the weekend before I went to France, this was a perfect place for being vegan though! You have to visit Rasoterra and Flax & Kale if you ever go on a holiday there.

I am french and I always insist a lot and ask many questions when I go to the restaurant to make sure that it’s vegan 🌱 Some people just don’t know the difference betwenn vegan and vegetarian. 😣

I am only seeing this video now, and as person that come from the south of france (toulon) and just want to say that yes it is very very difficult to find any kind of restaurant with vegan option. And the few places that are actualy vegan or vegetarian are just out of price. But saying that, I hope you enjoyed your trip there and the beautiful views of our region !

If you ever go to Austria, try Veganista, they have the best vegan ice cream, so creamy, so many types too like I think they had more than 10 flavours in the location I went to on that day

Eisperle in Graz is so much better with unique flavors, everything is homemade (and I believe organic as well) so no surprise they‘ve won the Falstaff competition to be the best vegan ice cream parlour 3 times in a row :)

I just pre-ordered your cookbook! I stopped being vegan because it was hard to balance my ADHD with my diet, but it makes it, so my diet isn't matching my ideology which is painful in its own way. Your recipes are understandable, fill you up, and clean, so I feel excited just thinking about them!! I can't wait for the cookbook!

@@mimizu2007 I think you dont know what Adhd is. Yoga is nice and relaxing and sure healthy but wont 'heal' or 'treat' a neurological disease. Since I have to take my medication strictly I always carry a vegan snack with me to be able to always take them, even with no vegan alternatives around.

What country do you live in? So I might recommend some easy go to meals/recipes and alternatives :) I understand how painful it is to know what veganism is about and to struggle with a condition ( I have severe adhd too).

In sweden we have Mathavre foodoat but it tastes almosts like oats so its the same but not as muchy as ordinary oats

oooh let me share my favorite toast combo. i love sourdough or wheat toast with avocado, sprinkled with s+p and chili flakes, and then topped off with mushrooms that have been sautéed with garlic, onion, paprika, and oregano. def have to eat it with a fork and knife but soooo yummy

Here are my favorite toast ideas: - toasted multigrain bread, cream cheese (could be non-dairy), and guacamole 🤤 (this idea may sound weird, but trust me guys!) - toasted bread, chickpea mash (season with olive oil, salt, pepper, Tabasco and lime juice), diced cucumbers, olives, bell peppers - toasted bread, generous layer of peanut butter, a squeeze of lime, black pepper, chili flakes, and some chopped coriander (cilantro) - toasted bread, peanut butter, banana slices, cinnamon powder

I was just in Nice for a vacation too and we saw that very same dog sleeping outside of a restaurant in the same spot! So cute! I have celiac disease and I had troubles finding places to eat, I wanted to try Koko Green which was also vegan but unfortunately the day I wanted to go there it was closed

dandelion tastes best when you stir fry it in olive oil with some garlic, but i only ever eat it when my great aunt makes it in italy :D while in germany i always think it's the one from my garden and poisonous because i am weird.

That all looked just amazing, somehow craving for the Not Dog now. How did you find all these nice vegan places in Nice? I'll be going to Paris next week and I found it quite difficult to find some good vegan places when I had been there before. Really looking forward to your cookbook btw

I saw a canned avocado coffee drink at the dollar tree here in the US and I absolutely hated it. It had that BAD avocado taste like when an avocado had gone bad 😭 I didn’t even mind that it wasn’t sweetened - it was that damn avocado. I don’t think that should even be non refrigerated lol.

@@Zgryy Just whole grains, no flour of any kind. It's a diet to loose weight. By chewing everything and leaving out any sugar I eat less than half the portion sizes than before. When I reach my normal weight, I will loosen up the rules slowly. But for the next few months I will stick to it. (plus intermittent fasting, weight training and some cardio). I am very determined and have done this for 8 weeks now.

I was diagnose of hsv1 / 2 then I taught that was the road for me as as a breastfeeding mother I was latter cured when I came across #Doctorigba channel I can never forget his kindness towards my life thanks doc

Lol, wtf is "African food"? I'm from an African country and I've travelled the continent a bit... there are so many (very) different cuisines here that saying "African food" is pretty meaningless... even within my country there are multiple cultures with different cuisines, let alone the continent as a whole. Loved the video, I just really hate when Africa is so dismissively addressed by Europeans like it's a monolith - it's literally 3 times bigger than Europe, so there's even more diversity here. Not tryna be hater here, sorry, this is just a big gripe of mine and plays into colonial stereotypes that Africans are all the same

Come on its a simple dressing her mom made, she probably doesn't know what and how much exactly went in, but you can just be smart and guess that it was salt, pepper and mixed herbs. No secret science there
