She had to marry Charming by a certain time or the deal was off. Lillian had no idea so when her daughter started changing (likely due to FG to ensure only charming would love her) she panicked and sent Fiona away while she tried to find a way to cure her.

Like the potions can be made by anyone and still have the intended affect despite the creator's death, since the magic imbued into it doesn't need to be constantly redone such as a spell. Sure the affects can be permanent under certain circumstances (such as health potions in videogames) or temporary like the love potion without true loves kiss. It all depends on what it's used for. Look at Rumpelstiltskin for example, sure Shrek could have killed him but the contract would still stand and thus have no way to return home before disappearing.

Just thought I'd add a potential sin. At 10:48 Shrek and Donkey drink the potion while in broad daylight. It takes until Shrek and Donkey pass out in a barn during a storm, a night time segment with the king and queen, then Shrek and Donkey to wake up again, and for the potion to take effect before they read the back of the bottle to learn that in order to make the potion permanent they have to kiss before midnight. Does this rule just skip around the fact that it took a whole night for it to go into effect? Wouldn't the potion wear off by now? Or is it just excused for plot purposes? I'll take answer number three for 300.
