Well he actually wants to look intimidating, the mask is there for that. Not only you made him drop his sword (which means he lost, that's a rule) he also lost a big advantage and gained a disadvantage since his face is not covered and he might take serious damage.

Apparently, in Smash 4 Kirby's last alt is dark purple with gold glowing eyes and no blush. This is commonly known to resemble Meta Knight as Meta Knight himself also has his 6th alt color in reference to Kirby. After Smash 4, for some reason HAL decided to canonically give Meta Knight gold eyes and no blush for the rest of the main series since then.

It was so mind-boggling in the NES days seeing Meta Knight's face for the first time and noticing he is the same species as Kirby before he quickly peaces out. And the faceplate he leaves so fast cause he obviously doesn't like being seen in that state. He's such a cool character and I wish he had more lore explained in game. Also, I wish o could hear and see him talk with is badass smash voice outside of smash brothers.
