Add salt after you cook so it doesn’t draw out moisture in the pan thus making them soggy

Soggy, the trick is no salt ever till they are done:: the salt releases the water and they won’t caramelize brown ? Cook on one side with entire zucchini . Then it all get browned and solid no soggy .. later cut into chucks and salt on plate .yoy can see how the finished is to over cooked here !done correctly and the zucchini will be like solid potato fried with out flesh all mushy ! Plus every bite will by crunchy ! All chefs say “no salt “ wihile cooking zucchini!
