That looks great, defiantly going to make that next week. And oh did I learn my lesson years ago when I was chopping up about 3-4 jalapenos for a chili; didn't have gloves and 10 minutes later forgot that I was chopping jalapenos. Went and rubbed my eyes. That burn, that burn will live in my memory FOREVER, I will never forget it.

AB, My wife came across your channel today. We have been running your videos for bout 4 1/2 hours. Mexican cornbread, shrimp and grits, July 4th peach cobbler and epic paddy melt. I like to make Mexican Cornbread Casserole. Layer the cornbread mix (AB's recipe), taco meat, shredded cheese and cover with the remaining mixture. So good!

I shuck extra sweet corn and cook it on the grill with some olive oil and Mexican spice (Tajin seasoning), then I cut the kernels off for my Mexi-cornbread. I also like the heat so I don't scrape my seeds out. If i want more heat I use Serranos instead, (with the seeds...)

Can of Mexicorn is a nice addition for this kind of cornbread. With the different colors of peppers in the canned corn has amazing flavor.

You know this recipe reminds me of the Jiffy Cornbread Casserole I found and made years ago for a Church Potluck Dinner. I added Cheddar and Mexicorn plus most all the ingredients listed in this recipe here. I’m sure AB’s recipe trumps my version but overall a dynamite recipe.

OMG…my grandma & mom used to make this when I was a kid…they called it cowboy bread. That was in the 70’s/80’s. Then when I was in my late 20’s, I was at a fancy restaurant in Scottsdale, AZ, and had an amazing salad that had this same bread but it was turned into crunchy - yet chewy? - croutons in it. I bout lost my mind! 🤯 So today for some reason, I thought I’d try to make those croutons, and you are the only one I could find that’s got the recipe right!👏👏👏 Thanks for the awesome video and bringing back some sweet memories.❤

This is a wonderful recipe for Mexican cornbread. Furr's Cafeteria used to have the best jalapeno cornbread. This seems very similar. I always get confused about mixing the wet and dry ingredients. Do you add the wet to the dry or the dry to the wet? Haha.

Google it. There are many types. Try to get blocks though, not pre-shredded. Walmart has a good variety,so other grocery stores should too.

Sure, there may be some bugs in flour, but they don’t get “ground” by sifting. Also, if you can “see” bugs in your flour, pick them out or toss bad flour. (Usually old flour). 😀

I don't know about other places, but here in Texas the jalapenos have been really weak this year. There's not much heat to them. You can leave the seeds in. I've been using serrano chilis when I want some heat in my tacos or salsa. I usually use another kind of pepper, too, like a poblano or an anaheim. All of them have a slightly different flavor as well as different heat levels. And the flavor is improved by giving them a little roasting before you add them. And definitely wash your hands after cutting them up or handling the pieces. I will not describe what happened to me about 40 years ago when I learned that lesson, except to say that there are parts of your body besides your eyes that are sensitive.
