Actually you can see the rank "AM3" before the name, so that's actually not the pilot. An AM in the navy is an Aviation Structural Mechanic. The name of the pilot can be seen higher up near the cockpit, LTJG Richard Packer. A lot of jets will have the names of the crew who works on them too. Still a cool detail!

Yall don’t know who Ho Chi Minh is? I don’t think Ho Chi Minh would be flying or working on that plane. He was like the leader of North Vietnam during the Vietnam war, idk what he is doing now, but i don’t expect him to be working on a US carrier.

Are you talking about the horizontal stabilisers? When the plane lands its gyroscopic sensors will detect its bouncing and nose up nose down movement and try to correct by moving these surfaces accordingly
