You are supposed to fold over the edge before you sew the gathering lines. It makes a nicer edge.

Well, in this case she's making a card and has topped it with another decoration to cover the center, so the inside edge is far less critical than it might be on a garment or other item to be washed. It's a fine tutorial.

You could fold over the edge before doing the basting/gathering stitches.
