I have 3 of these SouthwestDisk cookers, fixing to order my 4th. Like you, I did my research, and determined them to be the best on the market- and they are. I've literally cooked everything on them, even crab legs... get a dome lid, thank me later. Absolutely LOVE them all !

I plan to eventually get the lid. It arrived Friday, I made the fajitas on it. Yesterday smash burgers. This morning bacon, hash browns, scrambled eggs, and Italian bread toast. Tonight I will attempt liver and onions on it.

im vey late to the show here on a discada.... based on your vlogs, I looked at a bunch of different makes and focused (thanks to you) on the southwest discada....it was delivered today and it is AWESOME! its a new family heirloom! thanks for your work and your outstanding channel!

Super nice. I first saw one of these back in the early 80’s. Visiting some folks in Port Lavaca Tx they were frying some oysters in a home made one. I didn’t know you could buy one either. They also fabricated a gas burner using the guts from an old water heater. I’ve always wanted one and now all these years later I’m going to contact Southwest Disc. Good job and like your Spanish. After all we all in this together.

Southwest makes awesome ones. There are others but I think Southwest is Crème de la Crème. So there’s some French for ya.

Yet another reason I wish I had welding skills, discadas, discs, disco, whatever you want to call them are really cool. The fajitas look fantastic, quick and easy dinner. One day I’ll get one of them, definitely on the list! Have a fantastic week big Lew!

I do too, wish I could weld. I made a “C” in welding shop in high school. Welding masks and my glasses didn’t get along. Anyway for those of us who don’t weld, Southwest Disk can do it for us at a very fair price. Thanks for the comment Charley.

Best thing I saw, was that rice. The more seasons that you use , it turns into a gravy out.. You never cook fajita skirt , unless you marinate it.. watch this KZbin link..it good.

Looks good. To tenderize beef here’s an excerpt from WoksOfLife: HOW CHINESE RESTAURANTS TENDERIZE BEEF It’s time to share some Chinese restaurant secrets on how to tenderize beef. Tenderizing your beef is the first step of the traditional process of velveting beef practices by Chinese chefs. The first step is to add a good amount of baking soda to the beef--about 1 rounded tsp per lb Next, add 1/4 cup (60 ml) water (per pound of beef), and massage the beef so the baking soda and water is uniformly distributed. Set aside for 1-2 hours. This step tenderizes (baking soda) and hydrates (water) the beef. Next, the beef must be rinsed thoroughly under running water to rid it of any excess baking soda, or you will taste it in the dish. Use your hands to stir up the beef during the rinsing process. Once the water runs clear, drain the beef thoroughly in a colander and transfer it to a bowl for the marinating process.

Thanks Big Lew! I have had one of these for years, love over 10 year I think. Our nephew that works in the oil field where they use these a lot went out and bought me one. We never used it, I'd never seen one and had no idea what to do with it so it got put in a corner of the garage and well, it's just been sitting there where I forget I even have it! I wanted to cook on it with him and we could never get together unfortunately. And I have thought about breaking it out lately too. And now after watching this, I will have to. It looks simple enough and I have a Blackstone so how different can it be? And your fajitas look delicious! Thank you again Big Lew for the inspiration!

Hahaha, we call that a Portuguese wok in my area, I need to clean mine up, and move it by the new smoker when it gets here. I had some of my students make mine, we designed it for charcoal and wood and we concluded a grill we swap out,
