I agree, pretty much anything deep-fried is tasty...especially when it's served with a tasty dipping sauce. Having said that, like anything else in your diet...moderation is key. The oil used to fry these falafel is canola oil (you can substitute either vegetable, corn or peanut oil) and it is pre-heated to a temperature of 375F.

You are welcome. Traditionally, skinless fava beans are combined with the garbanzos...but they vary so much from market to market that I decided to leave them out. The flavor and texture is still crunchy and delicious. I also love falafel sandwiches...it is one of my favorites. Sahtain!

You can bake them...I would use the convection setting on the oven. It's not like frying them...they are so crispy and crunchy when they are fried. Give the convection oven a try.

I was under the impression that Lebanese falafel are made with dry white favs beans and Garbanzo and that the favs beans make the falafel more crispy. For your recipe what porportion of favs beans could I use with the Garbanzo beans.thank you.

Greetings, I really am surprised. I have never had that problem. One thing for sure is that you really do not want to boil the beans...it introduces too much moisture into the mix. Please...try it again and soak the dry beans over night. The next day follow the recipe instructions...making sure that all the ingredients are free of any excess moisture. You can grease a baking sheet and bake them uncovered until they are browned and crispy. However, I don't believe they will be as crunchy as when fried. Good luck!

I don't like to press the patty hard in the mold.. I just put the mixture in the mold and remove the excess without pressing to keep it fluffy instead of dense in the inside.

Chef, I have your book and have tried several of your awesome recipes. I tried this falafel recipe last night and they fell apart as soon as they hit the oil- twice!! I was so disappointed since the tahini was already made and tasted amazing. Maybe I shouldn't have used canned garbanzos? Please help...

Bingo! You can not use canned garbanzo beans. They are too moist and will never hold together. Give it another shot using the soaked dry beans...the outcome will be perfect! Sahtain! (Double Health.)

if you do use canned chickpeas you can shallow fry them instead. they won't be quite the same but they will still be tasty and less likely to fall apart

Thank you for showing me how to do this! My family loves Falafel and the first time I tried to make them, they TOTALLY disintegrated in the oil - totally gone! I had used canned garbanzos and had not taken care to dry any of the herbs. I thought that a little moisture would help them hold together! hahaha When will your web store be reopened?
