Thank you so much! 😊 Adding a bit of red wine is a great idea if you enjoy cooking with it ( I do not cook with alcohol but it is a common ingredient in pot roast recipes)-it’ll add a rich depth of flavor to the pot roast. Just be sure to let it simmer for a few minutes to cook off the alcohol before adding the rest of the ingredients. Let me know how it turns out if you try it!

I love your food but i try to get more greens in my diet and my families. So is it ok to just add collard greens in? Im afraid spinach and cabbage would over cook for that long

Thank you so much for your kind words and for being here! 💛 Yes, you can absolutely make this in a pressure cooker like the Instant Pot to save time-it works beautifully! Use the sauté function to sear the meat and onions, then pressure cook on high for about 45 minutes to an hour (depending on the size of your roast) with a natural release. Collard greens are a great addition! They’ll hold up well to the cooking time and add a wonderful earthy flavor. Adding a splash of red wine is a lovely touch too-just let it simmer for a few minutes before pressure cooking to cook off the alcohol. And fresh rosemary and thyme? Perfect! They’ll make the dish even more aromatic and flavorful. Let me know how it turns out with your greens and extras!

I’m wondering how thick the chuck roast is? 3-4”? (Where I live, the chuck roast comes in more of a “slab”…so I’m wondering how “wide” a “slab” I should look for knowing I’ll probably be cutting the roast in half before cooking.)
