I ate here for my birthday and got an amazing burger. I saw a huge hair cooked into the meat but before I could say anything the waiter spotted it, told me not to touch it and got me a fresh one. The waiters then gave me a free glass of wine, free chips and free dessert. I didn’t even have to utter a word. Insane food and service from this place, can’t wait to come back.

ive just spotted something, on every video when you wash hands, at no point does the handle actually get cleaned, which means the raw meat etc is constantly on the handle, so when you have washed your hands and you turn it off, that residue is now on your hand again.. maybe im wrong

Personally prefer the josper grill. I changed my job from a normal open grill/robatta gril and its a big big difference... Josper acts a bit like a oven as well if you distribute the coal on one side... Most of my dishes now stay in the josper untill mains away without burning. Steaks burgers not a problem. Fillets of fish 3-4 minutes ready. Duck breast whole fish . You name it everything goes in 😂

It's a tough gig because it's not just what your cooking at the time you've got to remeber to start cooking for other tables and match the other chefs, I always think of it like a dance or performance. Having timers massively helps and some places will have 10+ timers for meat and fish section. In reality you've got to be a bit mental to do the job.

He's organized, thorough, and efficient. But I wouldn't say this is a crazy busy restaurant. It looks like a regular service for the lunch crowd. An open kitchen with a staff of 8? In my mind, that's a glamour job.

could be a lot of things, most restaurants will finish meat with a generic flavored oil (with garlic, salt, sugar, herbs and spices) that they just brush on to give the meat a nice shine and flavor to it
