Man at 22 but working line for 5 years in a place that made me go for anger management watching you guys work so seamlessly is honestly beautiful and inspiring Edit. Reading the stories and hearing your experiences has been an honor, now im working at a better place with people not threatening to fire me when i cant have 100lbs of chicken cleaned and prepared every other day on my own aside from other responsibilities and now have a seamless team that makes everyone's life easier. I hope you, wherever you are have the pleasure of having an awesome team that you can rely on❤️

The industry is changing, I am in the same shoes as you, 5-6 years experience and I got to the sous-chef position in a really nice restaurant where the toxicity was slightly less present than in other places. Do not tolerate any toxic environment and look after yourself, chefs are highly sought at the moment so take your time and choose wisely. Good luck 🤞

To be honest their kitchen is ran smoothly and there is no anger there. 99.99999% of the kitchens will run under a gordon ramsey wannabe who thinks the angrier they get and the more they treat their staff like an asswipe the more money their show will generate. They just forget that there is no show and they are just being c*nts. This kitchen that you see in this video is unique so don't feel too much regret as chances are you would not be able to find a place like this.

Holy, as someone working in a restaurant with the most poorly ran services I've ever seen. Seeing such calm collected communication gives me motivation, and insight on how to carry myself better in the kitchen. I also respect just how clean and tidy you keep you area during it all.

Yea man being in the shit is a relative term. People like to play up how in the shit they are to contrast it with how they seemingly handle it, then complain about everyone and anyone... and everywhere they worked in the past. Theres a total crab in the bucket mentality people carry with them and thats how you run into people who run those shit services. They dont just simply keep a positive attitude keep their head down and trust in the flow state, they gotta complicate shit.

This place does keep clean and still get stuff done on time, great job! I been there before, we did events simultaneously with 800 people that reserved for that day. But nothing gets messy if you keep yourself concentrated and collective when there is so much going on. 🫡

I’ve worked with culinary graduates. The rush is something they don’t teach you in school. I’ve seen graduates crumble under pressure. Something to consider and I wish you well on your culinary journey

I tell you. If you had a video of just explaining the different stations/positions including the back and what everyone does. That would be amazing and would help me, and probably others, understand what everyone is doing and what to expect from everyone. Great job under a lot of pressure, great communication.

I worked in a nice restaurant for a while in High School. On slow nights, sometimes I would get the privilege of expediting & organizing the tickets. That communication with the chefs and the focus is something I really miss. Nothing beats the feeling of getting thru 20 tickets in under an hour. The kitchen is just a machine at that point. I think being allowed to do that did a lot for my confidence.

Outstanding seamless service and people are spoken to in a respectful way and that matters enormously. All too rare in a professional kitchen. This is such a superb channel!! Clean!! Currently off work as I fractured my radial head on my right. Since I have been off it has been so depressing. Like COVID all over again. After I found these videos It has actually helped. Not just my need for our industry but inspired to make similar content. Not for KZbin. No chance I can be done with that. But just to show people what we do and go through for the customer. This has to be one of the most inspiring videos ever, especially for aspiring chefs. watching this clip makes me remember the "sauce guy" in our town. the resto have a ongoing tradition. and it's already several generations old. the tradition is, the oldest chef, once retired will be the sauce guy. there's only 2 chefs. one is the main chef who handles everything. cook, fry sauteé and everything. but the oldest is the sauce guy. he does not do anything but cook sauce. that's how they retained the flavor several generations over. regardless if family or not. if in case there is a break in line like the current chef resigned or moved to greener pasture, he is still welcome as the sauce guy when he returns, given that he works as main chef for 1 yr to return the feeling. after a year, he will then be the sauce guy. same thing once the sauce guy is done, the main chef will take over and train the chef who will take over as the main chef

I love cooking and adore baking, but whenever my mom asked if I wanted to pursue it professionally this is why I always say I will never be a chef. I love the art but I despise the environment it is most often created in, and I could never live happily with this kind of stress and pressure. Very impressive

Did my stint in a kitchen from 15 til 18 and was running a 30 cover place myself but getting paid really shit wages (1.60 an hour) so jacked it in and went into financial services. A lot of my mates (and my older son) work in restaurants and I was considering going back but had a massive stroke and don't have the speed or skills anymore. But watching this is great and ignites the passion in me, I still love cooking for family though

This is fantastic to watch, huge thanks @Fallow for doing this. Your work ethos is golden, particularly how you help and encourage other members of this brilliant team. Keep them coming. Subbed. Interestingly (light-heartedly :) though with a good level of truth), while watching several videos and my own experience as a customer in various restaurants over the years, one of the most important ingredients to so many dishes is...the sauce! particularly the sauce that's creatively poured over meats etc (and into the little sauce jugs). --> While it does happen(obviously), the %age of folk who will happily eat with no sauce is vastly outnumbered by those who 'need' a sauce, so.... I'm going to open a restaurant myself, and I'm going to call it "Saucy". The primary component will be.....sauce. I think I'm on to a winner ;)

Sometimes i dont know why we do what we do. We come in dreading maximum kitchen service. But once muscle memory takes over, its like a drug and we keep craving more. Nothing quite like moving at maximum efficiency on a busy weekend turning tables. Its a packed weekend over here. I always watch your videos to get mentally amped up before getting on the line.

16 hours and you barely get paid to even live. This industry is very very toxic and they will work you to death. Speaking as someone who has and is currently working for kitchens over a decade not one single restaurant has paid fair wages no matter how "nice" they are. Nice doesn't pay bills. Nice doesn't grant me a balanced life. Why the hell would I work 16 hours a day. For the "passion". What a load of shit.

16:58 I noticed that the chef doing the burgers under the grill was still doing it with the bacon on the side rather than on top of the cheese as asked. Awesome service under pressure though.

Excited to visit. Question; what is that bin you toss the dirty plates in to? I notice it never fills up. Does someone take the plate out of there frequently or does it go to some dishwashing area?

If you pay attention in some videos, you will see just very briefly an individual with whites pop in the video. That individual grabs the bin and replaces it. Majority of the video is focused on the flow of the food, so it has to be perfect timing for the dishwasher and the cook to do and look into the same spot.
