Stacy Lidvall and Marcia Williams from Family Counseling Services of Northern Illinois are with us tonight to talk about this year’s Dancing with the Rockford Stars and to help us make some sweet potato hash for Air Fry Day. Dancing with the Rockford Stars is on November 23 at 6:00-11:00pm at the Tebala Event Center. Stacy says that when people hear the name, they automatically think competition, but she wants people to know that it is so much more than that. The event offers a cocktail hour, a dinner catered by Green Fire, and preordered wine from Artale Wine Company. 5 couples will hit the stage and perform their dances with two prizes on the line. The People’s Choice award will go to the couple with the most votes/donations and the Judges Award will be based on actual dance ability. Marcia says that the event is just a wonderful time, and they even have an online silent auction. Air Fryer Sweet Potato Hash
2 large sweet potato, cut into small cubes
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon dried dill weed
Directions
Preheat an air fryer to 400 degrees F (200 degrees C).
Toss sweet potato, olive oil, paprika, salt, pepper, and dill in a large bowl. Place mixture into the preheated air fryer. Cook for 12 to 16 minutes. Check and stir after 10 minutes and then every 3 minutes until crispy and browned.
