I love your meal preps. Lots of inspiration. I don't have time to meal prep on the weekend, so I just make double what we are having for dinner each night instead. We then use the leftovers for lunch during the week and for meals when the kids come home from school. I have 3 teenagers so when they get home, they want full meals. This helps tremendously, especially if I'm still at work. They can pull something out and heat it up. TFS!!

A little bit of vinegar or concentrated lemon juice works both equally well, because they are BOTH a weak acid, killing germs. Plus the vitamin C in the lemon juice also helps preserve food longer, & prevents foods like sliced apples or avocados from oxidizing (& turning brown because the air hits them!) after slicing. And it tastes good, too!!

A hint on buying Pyrex. Look for all-caps PYREX on the glass which can either indicate that is vintage or that it’s from Europe, where a company called Arc International owns the Pyrex brand and still makes its cookware out of borosilicate.) The Pyrex with upper and lowercase is plain glass and can shatter easy.
