I love pineapple meatballs but have never had it made into a meatloaf....it would be so good with bell peppers, onions, carrots baked around it and then served over rice with your ketchup sauce drizzled over it All. I. Thinking it would be like SWEET AND SOUR chinese dish. Yum yum!

Love cheap meal Mondays!! The recipes always make me hungry and ready to try them out. I work with special needs adults who I believe would enjoy these and they always love to assist me in the kitchen. It’s also perfect for us to make together and have some to freeze too so on my days off they can take some out and pop them in the oven. I am like u I still cook this way. Yes I put everything in the freezer. I will stretch food until it squeaks. But I also like making ahead for fire meals. If I have to make a meal why not make several. It doesn't take that much longer. And it really does help in the long run. I love meatloaf I too make it all different ways. My husband liked Spanish meatloaf instead of bread crumbs and onions you used old fashion oats and sliced green olive that tasted pretty good. Like you said there is so many ways to make a meatloaf. Keep smiling sweetie xoxo

Tessie, the meds I'm on for treatment really affect my appetite and sense of taste, but that meatloaf dinner looked very good! And to think you have all those leftovers to make homemade tv dinners. That's frugal times 2. I think if the cost of all those meals were calculated out, it would amount to less than $10. It's easy to spend $10 on one meatloaf dinner (inferior quality) in a restaurant these days!

Smart to do all the meals n ready so those days don't really want to cook just bake in the oven n it's done. I usually use raw oatmeal instead of breadcrumbs n it helps to hold it together too. Your meatloaf meal looked delicious.
