When making hash browns from fresh potatoes try dumping shredded potato from food processor into the center of a kitchen towel then twist the potato into a ball , rinse with cold water and twist water away this will rinse extra moisture and starch away allowing potatoes to brown and develop that crunchy texture you are looking for.

Growing up, my father would put the rinsed grated potatoes into a clean pillowcase and tie a knot at the end. He then put it in our washing machine and turn on to the “spin” cycle. Then he would take them out and put the shredded potatoes into a cast iron pan with bacon grease. We had the BEST crispy hash browns ever.

Ketchup is the nectar of the gods. Hehehe. I don't know where we found this hint. If you force a couple of pieces of bread through your meat grinder when finished. The bread will carry nearly all the meat scraps with it. It makes the clean up really easy.

Your video's are so good and Oliva is such a doll. It was fascinating to watch how you slaughter the pigs, I was not sure if I would be able to even watch but I did and I learned so much and now to see how you get the sausage. We don't see this here in the city we just go to the store to buy our meats without thinking how it got there so these last two video's was a real nice learning for me. Thank you. SEASONINGS: Whenever you are adding a mixture of seasons to meat.... mix all the seasonings together first. THEN add the seasoning blend you just created to your meat. You will have a much better even distribution. Same applies when seasoning a chicken for roasting. ALSO: when blending large quantities of spices like you did for your pork sausage, weigh out the individual seasoning that you are blending together for a better flavor consistency.

Good morning Al, Gina and Olivia. When I make breakfast sausage I use the fine ground disc and when I make Italian sausage I use the coarse disc. It produces a more rustic sausage. You should get your supplies from the Sausage Maker in Buffalo, NY. Their spices are inexpensive along with all of the casings and charcuterie equipment. I’m gonna miss those pigs.

This video reminded me of when my family would get together to butcher. Great memories. You have really nice equipment to get the job done. We had older equipment from a grocery store butcher department from when they went out of business. We used an antique sausage stuffer to put the meat into bags. Lol.

I don't know much about grinding sausage but I make home made fried hash brown potatoes a lot and found that if I take a lint free towel and put all the shredded potatoes on the towel then twist it up into a ball until all that starch comes out then fry them , It cooks much better and taste great just season to taste.

That’s how we did it every year at my MIL, making Potato Latkes. We made a bunch! I bought the already shredded potatoes one year. Boy, did that make it a lot easier. I usually had 3 skillets, going at once, frying them up. They were so good!

Loved your videos. I discovered them this morning, starting with the harvesting of the two hogs. Now to the important part: As a kid growing up in rural south Georgia for me ketchup was a major food group. I would eat it on almost everything. No ketchup on Peanut Butter and Jelly sandwiches but I did slice bananas and put it between the two. I thought I had invented adding bananas to PB&J sandwiches until as an adult I learned it was one of Elvis' favorite. Well, mine too. Now, on to the Bacon video. Thanks much. I am enjoying these videos.

I agree Al...I never understand why people would want to drown out the flavor of an amazing steak or great sausage with steak sauce or ketchup. I’m not even a big fan of BBQ sauce. I love the taste of meat with just some simple spices and maybe complimented with some onions or mushrooms on the side. 🤦🏼♀️

I love me s good slab of cow. But not all of it is good. Sometimes you need to add a little bit of flavor. If you get a steak and eggs at a family restaurant, it usually needs a bit of help with some steak sauce or ketchup. I've been pretty spoiled the last few years. Locally, we have a lot of cheap(relative) wagyu and prime steak. Going to cheaper cuts of meat is rough. Even a choice ny that looks too lean needs some help.

Al, when I was a young man I worked in a couple of butcher shops. Both of those places had three plates for their grinders. We had one with the large holes that you used first that we used for everything; beef, pork, venison, elk, etc, for the first grind. Then for the second grind of red meat, beef, elk, venison, firmer meat, we used a fine hole plate like you had for the pork. We had a medium plate, with holes pretty close to the size of a small pencil, maybe a shade smaller, that were just for the second grind of pork. Whenever I had the fine plate in by mistake when doing pork, the machine would remind me right away by making me struggle to push the once ground pork into the throat of the mixer much more difficultly, and the end product would be much more 'smeared', - you wouldn't see the lean in it as well, even though the same mix was going in the grinder, the 'smeary' pork fat would sort of disguise the lean in it. I suppose it cooks and tastes the same either way, and you don't have to worry about a visual market, but you may find it much easier to send that second grind through with a medium size, 1/4" maybe, hole plate in front of the blade.

You probably couldn't have handled my last job. I was around a large university that did animal research. Animals give us life, food and friendship. I really like your channel.

You guys have all that great homemade pasta sauce....just imagine what it would taste like with some home Italian sausage to go with it . I love how y'all keep olivia around when you are doing stuff around the homestead. Teaching children where their food comes from and how it's produced is sooo important to their lives. Even if she grows up to live in the city she will grow up having the knowledge on what it takes to survive in this world. I thank God every day for my parents and my upbringing. eggs fried in bacon grease is the best yet. Everyone does scrambled eggs different. Well, not everyone. I make with a little water and some whipping cream. I noticed you did not have any grease after frying the sausage. Be hard to fry in that for eggs. Did you put extra sage in your sausage or just the maple syrup.

Morning, I watched this video a day after posting. Hash row s used to be my nemesis. I had much every time. I learned, heat your oil, put in you grated potatoes, season, then WALK AWAY. When you see the edges browning then you can turn them over. The hard part was leaving them alone until they were crisp. Give it a try. Please take care and be safe!!!

When you're making hash browns use unsalted butter in the iron skillet and flatten out the shredded potatoes like a big pancake. Let it get golden brown then flip over. I add salt and pepper at the beginning as well. My kids love hash browns cooked this way. Oh and after you flip it over add some shredded cheese to melt on top while the other side is cooking. Love your channel and how you guys work together. Sausage - sage, cracked pepper, sea salt, cayenne pepper, basil, rosemary, garlic powder, onion powder, thyme and coriander. If you want to sweeten it up add some maple syrup.

My late husband put Ketchup on every thing, I was highly offended by that, so one night he asked for a bowl of ice cream. I got him good that night his favorite Ketchup was his ice cream topping. He never drowned his food in Ketchup again. He found out I was actually a very good cook.

Great job of processig the meat Al. But,everytime I see a meat grinder it reminds me of one brave little boy. Helping his father ,pushing meat down the hole. His tiny fingers went down into the machine. In operating theater we had fireman cut the machine in half,his arm was amputated at elbow. Little boy never shed a tear. He recovered well. Moral of my tale is,children need to be aware of so many risks around commercial machines .

Personally I dislike ketchup. I'd add a dollop of maple syrup myself. I could almost smell that fresh sausage cooking yum. Blessings to all. 😊🇺🇸

Mary Jones maybe leave Figaro in the milking shed to get rid of the mouse. That’s why farms have cats. Mice are a nuisance and attract snakes.

My daughter bought me a fancy mixer that had the grinder and pasta attachments. I didn't know about the extra attachments. We ground our own pork and made sausage patties and did the same for hamburger. It was a lot of fun. Am looking forward to doing that when we have our own little homestead.

Yes, where I live it's legal, I was getting wiffs of a skunk smell but as you said it was a neighbours pot, didn't realize it stunk that bad.

R.R. E. I am a scuba diver. You see fish eating other fish etc all of the time. Once I watched an octopus eating a large Starfish at -70’.

Gina, if you turn the rims of your freezer bags down, they will stay clean while you fill them. A little trick my mom showed me years ago. They also stay open better.

I think you should have a breeding pair of pigs. Raise and harvest the babies and either sell surplus as tiny pigs or bring them on to harvest weight and sell the prepared meat. You would have pigs permanently plus all the meat you could wish for. Just a thought! 😊🤗😏

Thanks Gina and Al. For crispy hashbrowns rinse the starch out of grated potatoes in salted water first and drain then squeeze out excess water through a kitchen towel. The potato starch is what makes the hash browns gummy. Season and fry in a little oil of choice. Lard? Bacon grease?🐖I love your Lumnah Acres!
