I really love that you guys will tell us how to make some of your stuff at home. Instead of guarding everything and trying to get us to buy your stuff instead of making it, you give up tips for it... its so nice.

Amber Jade well, yeah, but when I see what a trouble it is, I’d rather just buy theirs. I am sure their experience and techniques just make a better chocolate. Wouldn’t be a treat if you had to make it yourself.

@@mickeylackey723 but its more of a treat when you make these as gifts, and give to loved ones. they make lovely gifts and people enjoy them more because you made effort to make them something. truffles arent too hard to make either, very easy a know if can look scary, but trust me these are pretty easy to make and you can play around with flavours too creating your own.

So they help the few people who will actually try making them & look good to the people whom would just rather buy them mail order. Plus, there's a small chance that those that do make them, order some of theirs to do a side by side comparison. (They probably also are getting a check from YT for these videos.)

It takes time. A lot of people work and don't have the time, even if they know how to do this. Also, he's a business and makes a much LARGER batch than we would at home. I'm retired and have worked at it, even when I worked, I'd make a home style batch once in a while for special occasions. I did a lot of chocolates one year and sold them at a Mother's Day craft show. But normally I don't do that until the fall to winter holidays 🙃

But , like you, I have been inspired by this loving family to do better, to be better ! They treat each other with love, respect, patience and good humour. And their videos are educational and fun ! if you're making this at home,you can just take your choc unmelted and use the heat of the cream to melt it while mixing, an even simpler way to make ganache is just putting chocolate and heavy cream in a bowl and microwaving it, I've only done this with chocolate buttons (the ones for melting) but you also need to be careful with how long you leave it in the microwave (the buttons shouldn't be melted all the way when it comes out of the microwave)

Karlis Libietis If you are using a chocolate bar and hot cream, chop up the chocolate as small as possible. It will melt the chocolate bits easily.

I like to use a cookie dough scoop to portion out my truffles. Goes faster than the traditional spoon method for scooping, but you still need to roll the balls before coating if you don't want a flat side.

Okay, I made the truffle mix today and it has been in the fridge since 2 pm. I gave it a twist by adding 1 tsp peppermint oil to the truffle mix. I made a half batch. I have not decided if I am going to chocolate powder coat them or have them chocolate covered. The powder would be much easier fer shur :) I will post some instagram pics when I am done.

Great idea! I've been making chocolate truffels myself for a while now, for special occasions, but always coverd them with Cocoa powder. Just rolling in them, but this covering in chocolate I will try, so I can make dark versions for my mom and milk and white for me and the rest of the family. you said 5 lbs of chocolate to 4 cups heavy cream? If you have 1 lb of chocolate and 1 cup of cream would that make it short a 1/4 lb of chocolate or did you add the weight of the bowl also?

Gaga4 Goats The recipe I figured out after lots of testing is, melt one package of milk chocolate chips (11ounces ) with one package Wilton light cocoa wafers (12 ounces) in a double boiler.No tempering needed.It hardens great,is shiny. Even molded chocolates pop right out! Don't get mixture to hot or it's wrecked! 💝🍫

I have a suggestion. Try using a silicon mold in small ball shapes and cool them down. I bet that would save Steve time and trying to carve out the truffle insides then roll them.

If you like more bitter chocolate go with a high percentage of cocoa, if you like more sweet chocolate then go with a lower percentage of cocoa

Love your mom and dad they are very sweet people but my question is do you guys waist any chocolate and if you do how much do you waist or loss b aide I know when you cover something in chocolate on the table you put parchment paper on the table but as the day goes on the chocolate must et hard so do you guys throw it out at the end of every batch or everyday or every couple hours. ?

The chocolate gets chopped up and added back to the kettle to be remelted and used, so, no, we don't have an over abundance of chocolate in our garbage

So if I did this at home, once the mixture was mixed (before it goes in fridge overnight), could I put it in like a 13 x 9 pan? Was wondering if that would damage the mix? I'm hoping that in the pan I could cut it into little squares so they would even then shape them into balls.

I have been making candy for years. Started out using fake chocolate flavored wafers for molded suckers for kids parties. And thought that's not good for adults.So I came up with using one package milk chocolate chips and one package Wilton light cocoa wafers (12 ounces )melted together in a double boiler. Don't get it too hot though ! It dries shiny,not sticky. And tastes like regular milk chocolate. Molded candies pop right out (after being refrigerated). I use it for my English toffee, chocolate dipped coconut macroons,s'mores bark .🍫💝🌴
