Depends on the bake. For everyday baking, I usually use a mix of all purpose and freshly milled whole grain hard red wheat. For muffins or a bake that needs less structure (like a pancake) I might also use red fife.

I’m glad you enjoyed it! My family is from Quebec which has a large percentage of Catholics due to the French missionaries who came in 1600’s and also since they were allowed to retain their religion even after Britain won and took over New France. My husband’s grandfather immigrated from Germany and so he was also raised Catholic. I hope that answers your question ☺️
