DIY Giant Offset Smoker build

In this time lapse video you will see how the father son duo turn a useless old tank into a commercial size smoker. With this build we are hoping to up our bbq hobby from amateur to pro!! @@fathersondiygarage3580 wish I Could DM pics of it to ya when I’m done. I was stuck at the legs trying to figure out the right angle to cut the square tubing for the cooking chamber to fit right. But I figured it out. Was a hurdle that I had to jump over. And the fact that I’m working in a small apartment patio is even more frustrating. But it could be worse. I could have no space to work in. But I’m going to get a folding welding table and that’ll help with getting more space back there.

Plenty of space for preheating your sticks or chunks in that box. I smoke in the Colorado mountains in winter. Tough to manage your fire with a small box. Thanks for sharing.

Yes it does. Compared to our regular size smoker that we had before this build it retains heat and shaves two hours off of cooking time. My favorite feature of the build is the smoke stack!!! Thank you for the support we are hoping to get more videos out soon!!

Nice job And you were stick welding 😁 The only thing I would have done differently is a stainless steel screen for your food cook surface. Well and maybe incorporated a rotisserie to do a whole pig 🐖 besides that great job

Nice smoker! Does the smoker really need the deflector plate inside the chamber? I’m asking because I just removed it from my smoker. The smoke/heat was going under the meats because of the chamber deflector plate. I now have better air flow going through the chamber.

Hi Ralph, Adding a deflector plate to our cheap offset smoker improved the temperature consistency across the cooking surface so we decided to add the deflector to this one. However, this is much larger and may not need the deflector. We'll be cooking on it for the first time this weekend and I'll have a better idea then. Thanks for watching. Steve

If the plate goes all the across chamber with a opening on the end and your stack is above the fire box that's an reverse flow smoker.

The stack is actually one of our favorite features. The reason we went with the bolt on was to be able to have a tall stack but still be able to take it off and store in the garage.

Yes sir 398! The smoker is awesome, I do new construction but got the tank off a service job I was apart of. It’s Massive and cooks a mean brisket!

How you you think the smoker would run without the heat deflector? I see alot of people removing them.

Personally when building we thought the heat would concentrate to much in the beginning of the tank and not spread evenly. We were worried our meat closest to the firebox would cook drastically faster than the other side. Everything works well on our smoker and it cooks some good bbq so I think we made a good choice.

I always have a question about these diy smokers. People use different kinds of steel drums/tanks /containers, are these ones food safe? Or do they need to be food safe?

Usually smokers are built from propane, compressor, or water tanks. All which are food safe when properly cleaned. This tank happens to be an expansion tank for hot water and was lined with a rubber bladder that we took out. What we did was grind off the rust and lit a fire to burn out the tank. Last step , when the fire was going we rubbed the entire inside with cooking oil to coat it. Thanks for watching!!!

Think about welding in a insulated false bottom inside the firebox. Will help with longevity of the firebox floor. Edit. What kind of tank was that?

That is a great idea may have to add that as we do some upgrades. The tank is a commercial thermal expansion tank.

As a formal Cali resident, those wooden saw horses will cause cancer and birth defects according to prop. 65😆😆 Otherwise such a nice build. How did it work out? I love the fact that it’s a father and son build while using a stick welder!

The tank was a thermal expansion tank under no pressure so no purging was necessary. The tank we got for free as it was about to be thrown away.

I got this tank from work. I’d recommend checking offer up or a scrap yard. These tanks generally get recycled.
