Welcome and get ready to switch out your store-bought banana ketchup for this homemade recipe.

Ingredients:
260gm red or white onion, peeled & finely sliced (approx. 3 medium sized onions)
25gm garlic, peeled & finely sliced (approx. 8 or 9 cloves)
80gm ginger, peeled & finely sliced (approx. 2 x 6cm knobs)
100gm jalapeño chilli, finely sliced (approx 4-5 chillies)
180gm vegetable or any neutral cooking oil (approx 3/4 cup)
200gm tomato paste (approx. 1 cup)
3/4 tsp turmeric powder
1+1/2 tsp smoked paprika
3/4 tsp allspice powder
1/4 tsp cayenne pepper
1kg very ripe bananas, peeled
400gm coconut vinegar (approx 2 cups.... in the video I use banana peel vinegar)
675gm palm or brown sugar (approx. 3+1/3 cups)
200gm light soy sauce (approx. 3/4 cup)
75gm fish sauce (approx 1/4 cup)
5gm salt (or to taste)

What the heck? I watched an Filipino eggplant egg short that mentioned banana ketchup which I've never heard of, and now banana peel vinegar! Today is a day of firsts. I don't even like 🍌 or ketchup, but...very interesting!

My Australian Head Chef here in Adelaide, South Australia asked me on how to make the banana ketchup since he was curious about the taste. Since I am the only Asian/Filipina who worked inside the kitchen, I was asked a week ago and I am lucky and happy to see your video. I will show him this and we will try to make one. 5:24. Logically, if you cook Filipino food at home, why would you go out and hunt for a restaurant serving Filipino food? This applies to any country, not only ours.While I do really appreciate your passion for our food, and all the history, dynamics, processes and variations (regional versions) offered; keep in mind that our palette IS adventurous AND as complex to discern what works for us. 👍🏽

Thanks for this recipe. I tried to find a b-ketchup recipe with certain flavours from U-Tube and this looked, sounded and tasted the one that could give just right flavour to my Pinoy BBQ. I got into Filippino food also the best BBQ ever during couple of months visit in some Citys and a rural village in Philippines. So thanks for the recipe. My kids also loved my long grilled, home made Filipino BBQ.

I have just returned from a two week engine overhaul on a container vessel where most of the crew were guys from Philippines. I fell in love with banana sauce. I just had to search for "how to make one at home" because you can't really get that stuff in Poland, and I fell in love 😂. Going to make it today

... banana ketchup, smells like the real thing. Till you take a bite.🤮. My buddy marryed a girl from the Philippines. He moved there. She made a large dinner. Used banana ketchup. I did not know. I filled my plate high. Took a bite all most got sick. What was bad is the Custom. Clean you plate or you insult the cook. 🙄 I had to eat all of it. Cleaned my plate.. then slowly, excuse my self. Said I was going to go buy some balute ( chicken eggs half grown still in the shell but the chick is in it. They bury them under ground to rot for 6 months. ) I walked a block, ground a spot...and up Chuck, the dinner. 😂😂😂, I now always take a small spoon full. Till I know what it is.😅😅😅

I think so because it tends to be neutral. If you blend some types of olive oil, they tends to get bitter. I guess you can also use sunflower oil too especially of you can find it organic.

Never be too shy to introduce your culture especially in Australia I have just subscribed besides America is kicking our arse in cultural diversity - it's quite embarrassing and what could be more enticing than Filipino cuisine. I have tried it once at my mentor's house. There really needs to be restaurants. I think people are bored with the usual new is always exciting. See what's common place to you is new and exotic to everybody else. See I know a Malaysian restaurant in the city I was thinking of taking over. They thought the same way you guys did but eventually need to expand because they got too busy but because there's no Malaysian restaurants around they're always crushing it. It doesn't hurt that they good at what they do but all the Malaysian restaurants I see in the city is pretty packed but clearly judging by your cooking you know what you're doing. When you have great Filipino friends you wanna know what they're made of and you are what you eat. I've never seen a Filipino restaurant you really should start one. As people go out for what they can't cook at home or too lazy & who's familiar with Filipino cuisine any howe in Australia?

I live in germany, i have been craving for banana catsup. there is no banana catsup in the asian store near me, another store is an hour away (gas is expensive) 😢, Amazon shipping is too much too 😅 I will just make my own now.

What you mention about looking towards other cusines when eating out is the same thing in other countries. People wanna eat something different than what they already know how to do. But I do understand what you mean. We basically have stagnated the evolution of local cuisine in favor of having foreign cuisines in order to satisfy our need for more and new flavor experiences.

I grew up with banana ketchup, and not actually a fan. It only becomes yummy for me when with tortang talong 😅 I guess if I make my own banana ketchup and know what's in it, I'll appreciate it more ❤️ Also, I've always wondered why a bottled banana ketchup is red. At least now this recipe explains why 🤣

Criticizes bottled ketchup for having more sugar than banana. Adds literally the entire bag of sugar into his own.. I mean technically theres still more banana than sugar, but not by much, and very ripe bananas are already very sweet.
