My goddd, this sauce and the prior marinade, look incredible! The city I grew up in had some amazing spots, but I moved to the arctic 8 years ago and the closets Jamaican restaurant is a 15 hour drive away. I can't wait to make this marinade and sauce, it looks like everything I crave. Gonna have to check out your rice and peas, and oxtail video; thank you for sharing and uploading!

I would definitely say pineapple over orange juice, used orange and made it quite bitter rather than sweet. Preference i guess personally pineapple id have preferred but great recipe. I made the jerk marinade too which is top notch

I have had that problem but it boils down to the quality of the orange juice used...I prefer pineapple juice as well!

I’m back! Dude! The marinade and chicken is amazzzzing; its got fruity and herbaceous flavours, warm and aromatic, the heat and spice level was really well balanced, and the chicken was still juicy out the oven too. Basting with some bbq sauce, for the last 10 minutes, helped with colour a ton as well. Can’t wait to try some fish with this marinade. Great tips and recipe overall The bbq sauce was really good too, but I felt like it had way too much soy sauce and kinda took away from the jerk and sweetness, leaving it salty. Or maybe I personally screwed up and put too much in by following the recipe instead of taste testing. Either way, it’s a great sauce and I’m excited to continue trying to tweak the soy and sweet levels to my liking. Thank you again for these delicious recipes, definitely gonna share with friends and family

Amazing! Taste testing is key because not all ingredients are created equal, I have that that problem when I change soy sauce brands sometimes. Sounds like your crushing it though!

I had the same. Just try to balance it out by adding more ketchup. It contains sugar and it lowers the ratio of soy sauce in the mix

I used store bought pineapple juice. Its a matter of preference, a good brand that has real pineapple or orange juice is great but freshly squeezed OJ might taste more dynamic in the sauce

about a week is good, maybe longer but after a week then flavour kinda falls off. You can also freeze it to keep it fresher for longer

@@feedandteach you can't get Pimento wood outside of Jamaica which is a shame of us living outside the island as its' what gives it that unique taste. I have seen videos from Jamaica saying even there they are using alternatives as it is scarce

@johnk6930 That's interesting. I don't have much trouble finding Pimento wood but that's just my experience. I did a deep dive video on pimento recently and I had a lot of pimento to work. It's abundant in western Jamaica at least

@@feedandteach That's good news. Maybe the stocks have been replenished now, as you say they are fast growing trees. I couldn't get it in the UK, maybe a year ago but I saw sites that were shipping to the US
