In today's new large family meals of the week video, we have large family cooking and canning from scratch! We make several simple slow cooker meals, roast brussel sprouts in the oven, have some easy breakfasts, and cook up a big homestead breakfast, too. We also make homemade bone broth from the bones of the full cow we purchased. And we can mandarin oranges from a big bulk fruit deal I snagged, too. Once when I was younger, I went to an auction. I got a entire truck full of mason jars for my grandparents ( whom canned a lot) for $5. They thought they hit the lottery.

I just finished watching this video and I'm exhausted! I've done water bath canning before but have always been a little leary of pressure canning after seeing one blow irs top when I was a kid (I'm 71 now). I finally bought a digital pressure canner and love it. I live alone so I don't need to can nearly as much as you do but I've been experimenting. I try not to waste anything so I either freeze or dry things and now I can as well when I find good deals at the grocery store. I've canned sweet potatoes, pinto beans, carrots, split pea soup with ham, pulled pork, taco soup, stuffed pepper soup and chili. I also canned some pepper steak that I can add thickener to when I heat it up. Now, after watching you, I want to try my hand at canning potatoes. Thank you for these videos and for the inspiration. ❤️

My grandma taught me to can. She always loved to see her finished product on the counter and said the fruit looked like jewels in the jar. And I always do the same now and think of her. They are beautiful.

@jamerrilstewart On the jar that has some come out of it...... It's called siphoning. It happens when the temperature changes too fast. A bunch can siphoned out of your jar. It especially happens with broths. When your canner is done lift the lid and just offset it on top of the canner for 5 mins.... That will help bring down the temp gradually. Also, the jar that did siphon..... If the seal is still good..... It's fine. You do t need to throw it out. ❤️ Love Grace W.

I just want to say thank you. I am pregnant with #4 and had a rough first trimester. Now that I'm 18wks I'm starting to get some energy back. I've been marathoning your videos for the last week or so to keep motivated with cleaning my sorely neglected home. I don't know what it is, music doesn't do it for me, but having you talking to me as I scrub the stove and vacuum- it's like having another person here and I don't feel so alone in my mama struggles. ❤️❤️

You can also have a strip of wood put in front of your pantry shelves, like a little fence, to stop the canned jars from falling or like you said an earthquake shaking them from the shelves.

I am a fairly new fan of yours, following you for a month and watching both old and new videos daily. I'm currently 6 months pregnant and sometimes I have trouble sleeping. Whenever this happens, I always play some of your videos, and your voice is so soothing that it always helps me fall asleep. Am very jealous of the storage space that people have over there. I have been a jammer and preserver plus 'prepper' since 2010 ( was a single parent at that point). Mandaran oranges sound really exciting, never thought of them. Seeing the broken one reminded me of this. I always used the wrack for years. (I only have ever done one layer) and a few years ago someone told me of the silicone canning mats. I was terrified of it at first. But it has been fabulous and a softer landing if a jar slips. And I think over all a softer thing to rattle on during the process than a hard bottom or wrack. I love it. Such a beautiful sight all the finished jars are :). hugs

Jamerrill you should try putting diced boiled eggs in your tuna salad. It’s super yummy and makes the tuna salad go farther.

Full of the Cold here in Scotland, I’ve been working through the batch frozen meals I have, tonight was beef stew and dumplings with frozen cheesy mash and frozen broccoli. I’ve never been so glad to have batched cooked

I put my vinegar in a spray bottle from Dollar Tree. Spray my towel when it needs it and then there is no waste-the vinegar left in the bottle is not contaminated and easily fits into the cupboard for the next canning project. LOVED watching this-thanks so much for taking the time to share. ❤

I don't put vinegar in the canner. I just take off the rings, check the seals, and wash them in the sink with soap and water. Then I label them. Then if there has been some siphoning, it gets them all clean. And that is what happened to that one jar (pretty common with broth). If the seal was good, it would be fine to use. If not - stick it in the fridge and use it in the next week.

I paid $9 Aussie dollars for a dozen eggs yesterday, I’m not sure why they’ve almost doubled in price since Christmas. Interesting that your prices in the US so closely reflect ours. I thought ours were due to weather, train derailments and Covid. Thank you for your videos, you keep me company when I’m home alone!

I don't know why unless it's price gouging. Went to get some stuff at our local Walmart and they were $16.97 for 5 dozen. That's cheaper than a lot of places. Farmers even say stores are charging way to much. Our news outlets said prices will start coming down soon. Take care.

You’re lucky to even get eggs, I couldn’t get eggs AT ALL at my local coles, woolies, IGA, Foodland/Drakes BUT I could get them over at my local fruit and veg. I got 30 eggs for $11.99. I’m going back tomorrow to buy more as my family missed eggs. I’m making my husband set up and chicken coop for chickens, I’m sick of not being able to get any. Hello from South Australia.😀

We had what I call the ‘Chicken Flu’ and killed them off. I’m not sure if that is really true! It’s just my husband and I, so I only buy 1/2 doz. At a time. I’ll buy a dozen if I’m doing some big cooking or baking. But I love to watch Jamerrill do all things. Her kindness to all blesses my heart 🫶🏼.

Put eggs in the instant pot with a cup of water for 6 minutes. Turns out great. And easy to peeled

I suggest that when you are filling jars repeatedly like that that you use a glass measuring cup to scoop up the broth. It will save your wrist and arm.

You need a cute little tea cart, this way you can just roll the jars over to the canner. And then you have a cute decoration for the kitchen.

As you have a freeze dryer you could air dry your orange/lemon peels powder them and use in baking smoothies and such 😊

You need a kitchen cart to can, you can put your jar's you filled on it and roll it to the stove.

Hiya! The orange board in the shower is waterproof tile backer board. If the new bathroom is half as good as the kitchen, it will be beautiful! We just finished a down to the studs remodel of our downstairs which included the kitchen, laundry room and a powder room. It was rough but we got it done in 6 months…

Tip… when canning liquids I dip a large pouring container into my pan to pour into the jars. It makes filling jars a lot easier and faster and the liquid doesn’t have as much of a chance to cool down.

I prefer to wash my jars by hand, because there is less chance of breakage and I can check them each for chips or cracks that may have occurred when they were being used. We each do things our own way and all of those ways are valid if we end up with food for our families!

A tip for your water bath canners: The rack you have in the bottom has handles with a bit of a zigzag. That hooks onto the side of the canner so you can fill the rack and lower the jars down together. Same when taking the jars out. Lift the rack, hook it onto the side of the canner and easily remove the jars without boiling water splashing onto your hands. It also reduces jars toppling over while removing them individually. Happy canning!

We live in Alaska where hundreds of earthquakes happen daily. We have just run black tape along the front of the shelves of jars. So far, it has worked great! It kind of let's jars bounce off of it and back.

That jar lifter is faulty in every ball kit mine does the same definitely a hazard . I’m 74 and still do some canning but just watching you is exhausting . I do only 6-12 jars at a time and no where near all the choices you do . I appreciate you showing all the moms how to do these things it is very needed in todays world . Thank you for all you do . Even I have learned a thing or two from your videos . Take some rest time for yourself ..

I came here to say the same thing about the jar lifter 😮. That lifter isn’t made to last at all. I now have a light green handled one that came in a canning starter kit along with the lid magnet tool, an opener/lid tightener and a book. Everything that came in the kit works great every single time I use it

If u put the vinegar in a bowl to wipe rims, it helps remind you to pour the bowl into the canner!

Jamerrill, put the rings back on the jars when you empty them. It protects the rims after they are washed. Don't have to put the lids on, just the rings.

I use a large plastic measuring cup instead of ladle to dish out the broth, goes much quicker. Yours looks amazing!!!

I like to fill my dishwasher with my jars and run a quick load and take my clean sterilized jars straight from the dishwasher to my canning project!

I have done 100 quarts of different kinds of broth since November. I use about 125 quarts a year. Sounds like a lot but large family here and lots of uses.

For canning I have found one jar at a time allows for interruptions and I am more diligent about the process. My 2 cents worth. Happy happy day to you!

Love how much you do for your big family! When I can from a roaster, I use my measuring cup to get it out, and it makes filling the jars very quick.

When you put a little vinegar in a tiny bowl to clean off the tops you can empty the bowl in your canner.

Just a suggestion: when chopping large amounts of eggs for egg salad use your star shaped meat mashers to chop the eggs into crumbles. It works great!

Have you ever considered having a shelf or something on wheels to unload on when canning? Either that or with the bigger canner now you need bigger cutting boards, so you can have a full one on the same thing.

I just did bone broth with ox tail. Roasted first with vegetables. Then put in pot with more vegetables and herbs and beef broth. Cooked for about 14 plus hours on slow cooker low. It came out super yummy. I made it super concentrated and will dilute when I use in recipes.

Wow ! What a accomplishment for the day, makes me wish I had a canner but I really don't think that I would have the energy to do it. I'm soon going to be 72 and I have degenerative disk disease, sometimes I wonder if I'm going to be able to even stand in the shower long enough to finish, before I have to get out. Stairs are hard for me to handle and my cold room is in the basement. I used to make up pickled beets and lady Ashburn pickles which I dearly love, but I haven't done them for 6 years

I’m actually pretty early for once. Hello from South Australia. Most the time I listen to the videos while doing house stuff and kids are at school BUT today my husband worked night shift so he has the day off AND as he is sleeping I don’t wanna make to much noise, I’m also pregnant so I’m taking the day to just chill out and relax and catch myself after a hectic week and weekend with our 3 boys. Nothing wrong with a down day, everything will still be there for me to do tomorrow. (It’s Monday the 13th of feb in Australia), I know there’s a time difference. Didn’t want people confused. Haha. Love your videos. Your voice is so calming and relaxing too! I'm sure you've thought of this or had it suggested but, what if you got a rolling kitchen cart to load jars onto to take to or away from the canning area. It might save you a few hundred steps too.

Have you considered getting a rolling trolley to use when moving jars of food from your stove to the counter. Amazon has several designs. Of course you wouldn’t get all your steps in. 😉

You can take a teaspoon and poke the bottom of the egg 🥚 and it'll be easier than taking the shells off

Love following the new home renovations too :) I have the same slotted spoon but in green, just happened to find in it in our local supermarket, love it and a must have as so handy. By the way you could use a small Pyrex glass jug to take out a bigger amount of broth and use the ladle at the end- much faster.

the beef tallow is wonderful for frying potatoes and you can also use orange juice instead of a sugar syrup

You could use a large glass measuring cup to scoop the broth. I use my 4 cup Pyrex one to scoop large amounts

Have you thought of using a measuring cup to poor the broth into the jars? Also if you have too many bones to keep you can make the broth and really condense it down then use the freeze dryer to make a instant bouillon. Its a suggestion so if your into issues getting jars/lids it one way to save room and your sanity with eternal questions of "Where am I going to find/make room for all these jars. After all why only have liquid broth and its a way to use your used lids for powders and such. Again my hat's off to you for all that you do on and off screen. you should never put empty jar in the ove, it weaken them (pardon my french) I hope you understant what I mean, but since I learned that, I always put mine in the oven with about 1/2 inch of water in my jar. What I mean is you shouldn't heat an empty jar, no matter the method you use, Keep on the great job, I love your video. from Quebec, Canada

Jamerrill, Once I remove the pulp and bones from my Oster like you have and fill it back up with water I will get 14 quarts. I let cook another half hour on a simmer. That is only if I fill it back up with water.

I sometimes use a glass Pyrex measuring cup to ladle both into jars. It goes pretty quickl, and it has the pour spout.
