I really like this quesadilla technique. I especially like the 'cook the meat with the cheese in the pan, pour onto the tortilla, and then finish the quesadilla in the pan' part. It is efficient time wise, and also lets the tortilla acquire some of the flavors from the pan. Props my friend

I'm vegetarian and made the egg tortilla, switched out the egg white for a couple of whole eggs since they are cheaper where I live and I am willing to deal with the extra kilojoules. Also through in some habanero peppers since I'm a goblin for spice. Absolutely delicious, banger recipe as usual

You know what's better for the tortilla? If you have a gas burning stove, let the tortilla sit on the burner for seconds. Flip and let it cook on the other side as well. Another great video by Felu!

major pro tip: reusable vacuum bags are pretty cheap and come with a small pump. i got my set from Amazon and they are meant to be for sous vide, but are also freezer safe. i haven't had to buy ziplock bags in 4 years. the 24 pack of bags i bought was like 9 or 10 bucks and came with the battery powered hand held vacuum pump.

When I put egg whites in a tortilla, I find that it is easier to just put the tortilla by itself in the pan, pour the egg whites, distribute them evenly and then cover it with a lit to make it cook faster. This basically adds a layer of egg whites on the tortilla. And then you can put the ingredients and add more egg whites so they kinda stick to the tortilla.

I find it super fascinating that you choose to melt your cheese in the bare skillet. I've never had a problem with residual heat melting my cheese in my quesadillas whether the tortilla is fresh or packaged. As for the other part, i agree with cooking the vegetables first. This infuses your oil with the flavors of the caramelized meat and vegetables. You can also use the fat from, ground beef to cook the veggies and tortilla is you wish to manage your calories from fat that way.

La banderita brand has these keto tortillas that are great for burritos and giant taco..they only have 5 grams of protein but they are only 80 calories. I just ate one with a 10 oz boneless skinless chicken breast 15 grams of whole milk mexican crema and siracha and toasted it..sometimes i add 1 oz of part skim moz and 1 oz of fat free moz if i get home late from training and need to get my protein in for the night..all together its about 500 calories rounding to the nearest hundred

I tried the avocado one and it surpassed all my expectations. I forgot to make the sauce, so at the end i just took store bought taco sauce and put that on top of the quasadilla and it worked well too.

Holy crap ... these look amazing! I've recently discovered how great and easy to make quesadillas are, although I've been mostly sticking with the standard beef ones. These other alternatives are fantastic. Chicken ones with the turmeric and peanut butter sauce sounds like a really interesting combination - gotta try those first!

Just as an update.. tried the chicken one yesterday. Didn't have any Turmeric, so used Chinese 5 spice instead. Amazing.. the PB sauce was particularly good! My partner had the same reaction to me when I told her what was in the sauce.. initially it was.. "huh.. that's odd".. then "omg.. that's really good!"

These are genius recipes! Definitely trying the first two, and the sauce recipes. I’ve been having trouble cooking egg whites lately. Any tips with that? They’re always solid when cooked, but once I put them in a tortilla, fold it and serve, it’s such a soupy mess. There’s so much liquid, as if the eggs weren’t fully cooked. 🙁

You’re over cooking them I think. When you cook them too much the proteins become hard and the water that they absorb leaks out of it and it can no longer store it. At least that’s what I believe is the problem but I could be wrong so don’t quote me on that
