"Red Bean Rice Dumplings" (Serves: 50)
Ingredients:
💛 100 bamboo leaves
💛 Round glutinous rice 3000g
💛 Red beans 1000g
💛 Rock sugar 500g
💛 3 tablespoons of lard
💛 50 red dates
Directions:
👉1. After washing the short-grain glutinous rice, soak it in drinking water for 4 hours.
👉2. Boil the red beans with 3 times the amount of water: With a rice cooker, put 2 cups of water in the outer pot and start steaming. After the power is off, wait for 40 minutes for better steaming. (The process should be done twice). Check the red beans, if they can be easily crushed with fingers, then they are OK.
👉3. The red beans are whipped into red bean paste with a blender with a suitable amount of water.
👉4. Add sugar and lard to boil the red bean paste, the amount of sugar can be adjusted according to personal taste
👉5. Knead the red bean paste into balls. Each red bean ball is about 40 grams
👉6. Wrap the rice dumplings (zongzi) with bamboo leaves (zongye). Please refer to this video for the method of wrapping zongzi.
👉7. Cook the rice dumplings in boiling water for about 1.5 to 2 hours (1.5 hours on medium and low heat, and wait 0.5 hours after turning off the heat) before serving. Freeze the red bean rice dumplings right away in the fridge for future needs.
😍 大家好,我是芬姐!「红豆沙甜粽」来自福建和浙江一带,吃起来香甜软糯。芬姐从小看外婆和妈妈在端午节前总是会包个2~3串,分送亲友。有别于传统的肉粽。做法其实很简单,主要是多花点时间熬煮红豆沙,虽然坊间有卖红豆沙馅,但是自己熬煮总是比较安心,少了添加物和防腐剂的疑虑。

「红豆沙甜粽」(50颗)
材料:
💛 粽叶 100片
💛 圆糯米 3000克
💛 红豆 1000克
💛 冰糖 500克
💛 猪油 3汤匙
💛 大红枣 50颗
做法:
👉1.圆糯米清洗后,以饮用水浸泡4小时。
👉2.用3倍水量煮红豆:外锅2杯水,跳停闷40分 (上述动作重复2次) 红豆的验收方式:蒸到轻压可碎即可
👉3.红豆用果汁机加适量水搅打成红豆泥
👉4.加糖和油煮红豆泥,可根据个人口味调整糖量
👉5.红豆泥搓成球状,每颗约40克。剩余的红豆泥可做其他用途(如:蜜红豆蛋糕卷 • 如何做蜜紅豆?|抹茶蜜紅豆蛋糕卷,無麵粉、無... )
👉6.用竹叶(粽叶)包粽子。包粽子手法教学请参考本影片
👉7.煮粽子约1.5~2小时 (中小火1.5小时、关火再闷0.5小时) 就可以上桌了。暂时不吃的粽子,可冷冻保存。
