At 3m35s he introduces a visual gag where FFMPEG (ostensibly) has produced 'MPEG barf' (artifacts) on the screen. This is a joke that calls into question the usability/reliability of FFMPEG. Such a great joke that you skipped!

is the screen tearing when he says "proprietary codec" a reference? i am not a ffmpeg enthusiast myself, but i get the same screen tearing when i watch the video, and i feel like it's intentional

Yes it is! It is intentionally done here, but in your daily video jobs you can encounter this when you are using your open source codec instead of its proprietary codec, given by some spurious data which is not properly video data and it scrambles the following frames. Nice attempt by the video author, really appreciate that
