Here is the proper way to can fig preserves.
Very sweet and very delicious.
Lot's of things to make with fig preserves but my favorite is right out the jar.
Here is the way to make them.
Ingredients:
3 Cups of sugar
1 1/2 Cups water
3 quarts of whole figs, stems removed and rinsed
This recipe can easily be tripled. Tripling it will yield 11 pints.

Instructions:
Combine the water and sugar and cook until sugar is dissolved.
Add the figs. Bring to a medium boil.
Cook for 2 hours on a medium boil. Remove foam as it floats to the top.
Stir often.
After 2 hours the liquid will become thicker and is now ready to put in mason
jars.
Ensure jars are sterilized and are warm. Lids should be soaking in hot water.
Add the figs and liquid to each jar, leaving 1" of headspace.
Ensure rim of jar is clean by wiping with a damp towel.
Place lid and tighten band finger tip tight. It should be fairly snug but not overly tight.
Add 2 TBS of vinegar to the pot of boiling water for the hot water bath.
Place jars in boiling water with 1" of water covering the jars. Do not lay on their sides. Jars should be upright. Make sure jars are in a rack or on top of a trivet.
Boil for 15 minutes.
Let cool for at least 12 hours then check to ensure jars are sealed.
