Thanks for the olive oil tip! We just started canning. Did our very first batch of 6qt chili 2 days ago. I got another tip to putting organza sash bags over my figs as they ripen. So I got this seasons full harvest of figs rather than the birds eating them all and now I have 3 Galllon bags full in my freezer. I'm totally going to be trying this tomorrow. I don't like overly sweet either and prefer the fruit itself be the star! So big Mahalo from Hawaii 🌺🤙🏼🥫

What beautiful figs. I prefer mine fresh & raw, but this is a wonderful way of preserving them ! We won 't get many figs this year. We had a late killing frost & it got most of them. This has been the worst year for gardening for us ever ! We went from having a long drought period to days & weeks of mostly rain ~ to the point of flooding ~ resulting in 3 drownings in our area in Central Virginia. So this is ONE BIG REASON you grow & put up as much as possible in the good years ! I have a stainless steel pot just like that & I LOVE it ~ thanks for the olive oil tip !

Brilliant! I see fig pudding, fig newtons, figs and pork, bbq fig sauce, fig buckle etc. coming out of these jars. I have loads of brown turkey figs and have always struggled to eat them all some how. This method of preservation in brilliant. Thanks you two:)

I think the film on the pot is "latex" the part of the plant protective system. A white milky sticky substance. Love your guidance.

Beautiful figs Wanda! Great job guys! Wanda, please use a metal ladle instead of that plastic measuring cup for hot liquids! I use to do the same thing until the cup melted and caused the hot liquid to burn me.

My figs are coming in but not enough to pick enough to can. If I leave them on the tree the birds will get them. Can I put them in the fridge each day until I get enough to can? And do I wash and snip the stems each day of each batch until I get enough, or not rinse and snip? They taste do good and I don’t want to waste them.

When all the jars were in, the water was over the tops by about 1/2 inch.

I have so many figs coming in right now I am at a loss of what to do with them. They are everywhere here in the kitchen and dining room. I am so gonna try this but I need to do pints. How much lemon juice and how long to water bath pints? I have never in my life seen a tree this big like ours and we have probably 1,000 more babies out on it.

Serenity Mountain Homestead one tablespoon of lemon juice . The time is 40 minutes in the canner.

Thanks for this video. Last year I had more figs that I didn't know what to do with. Now I know! How much lemon juice did you use in each quart? Is the ratio the same wth fresh squeezed lemon juice?

Wanda, how about how big are those figs? Im waiting on my neighbors figs to get big enough to pick. And can pigs be preserved iin pint jars?

can I freeze green beans until I get enough to can. only getting a quart every other day
