On this episode, I have Filipino breakfast for the first time. And, I get it from a long standing Filipino diner. This old school spot keeps to tradition by serving the classics, meats with fried garlic rice and eggs: tapsilog (cured beef) and tosilog (cured pork). I also try fried bangus (milkfish) as well as tortang talong (ground pork and eggplant omelette). The array is hearty and filling and a great way to start my day.

my favorite breakfast is bread and peanut butter plus coffee... not a fan of meat and rice in breakfast... you should try lunch or dinner dishes next time

There are many variations in the silog group, like corned beef, hotdog, spam, longganisa (sweet sausage)… any cured meat or fish will probably work. Personally, I prefer corned beef, longganisa, or tocino. For contrast, maybe you should try the porridge/congee breakfast options: the savory arroz caldo or the sweet champorado.

@@SeaKrait571 I think I’d like the corned beef silog. That does sound good. It’s just a matter of finding a place that serves it. The same goes for the porridges too. Arroz caldo, I think I’ve seen that on a menu somewhere. But, champorado might be a challenge to find. But, I will try to find it. Maybe, I’ll get lucky. Thanks so much.

Not so much breakfast, but you should try "sisig" and chicken inasal (marinated chicken bbq). Thank you for the wonderful reviews. Made me salivate!!

The way to really appreciate silog's taste in every bite is combining all 3 together.

@@Vablonsky Yes. Most of the time we even mix the egg with the rice so it's like an egg rice. Then we dip some tapa in the vinegar sauce then mix it with the egg rice for that perfect bite.

Thank you for reviewing! I appreciate your gut reactions and commentary on how the flavors meld together. The thing about Filipino food is you follow different bites after another (if not eaten all together) to balance out the flavors. So you’re right in wanting to follow the bangus with rice but it’s nice to offset it with another dish that’s more bland, like the tortang talong or a fried egg. Looking forward to your next videos!

So interesting to see Filipino food in different places. For the full Filipino silog experience, you have to eat little pieces of the meat and egg together with the rice in one spoon. The most typical silog meal for breakfast would be hotsilog (recently trending in the news), but it's really a very basic meal and strange for many since hotdog is eaten with rice, but it's kind of like the Pinoy bacon and eggs thing, that's quick and practical.

I would say that it is quite unusual for a diner to serve Filipino food. Many Filipino establishments are of the turo turo variety. Many are in the back of a grocery store.

Eating the meat, egg, and rice together seems like a logical move actually. But, it didn't occur to me when I was filming the episode. I'll have to do that next time. And, I didn't know about hotsilog. I haven't seen that yet. But, growing up, I did eat hot dogs with rice. Just like we'd eat spam and rice.

Sinigang(sea-knee-gang) is a sour soup. Sinangag(sea-nah-ngag) is the fried rice. It does get confusing at times since some same name have 2 different meaning. Like pata(pah-ta) & pata(pa-tah). One is a dish and the other one means "dead tired" referring to the body's condition.

Oh. Thanks so much for the insight. All of that is good to know. For someone who can't speak Tagalog and can mangle words, sinigang and sinangag can be confusing to say. And, I can be "dead tired" from eating crispy pata. Haha...it's one of my favorites for sure.

Yeah...I think what happened was that the Filipino woman who owns the diner decided 10 years ago (having owned the diner for 15 years at that point) to offer Filipino food in addition to the standard American diner fare. Filipino food is her heritage; and, it was just a logical move.

Those silog meals usually served as breakfast meals because it's easier to prepare. But in some restaurants or small eateries in the Philippines, will serve the silog meals all day. The Filipinos eat rice meals at morning, noon, and night. And even in between. 😂

Oh, yeah...I have heard that the silog meals are eaten throughout the day. But, usually, after breakfast, at the turo turo spots, I'm distracted by all of the other stuff that's lying out and tempting me. But, I wouldn't be against getting a silog meal for lunch or dinner. And, yes, with plenty of rice. I love rice. Thanks so much for watching.

That makes sense and is sound advice. I will do that...either together in the same bite or immediately afterwards. It's the same way essentially with Chinese food and Chinese eating practices. So, hopefully, I will not lose sight of this.

The ng sound in “sing” is placed in front, as in sina-ngag and ba-ngus. Ng is a phonetic unit in the local language and is treated like a consonant.

The milkfish was already deboned, that you can also eat it's skin.

I didn't focus on whether it was deboned or not. But, I guess it was. I like fish skin too. So, I'll have to pay more attention to it the next time I get bangus.

The laing you like it's Gabi not the night meaning, but I searched and it's taro in English, you can customized your own, like you can make it a little spicy and put some meat to it.

Great video! But oh, the different components are actually meant to be eaten together in one bite, or at least the rice + any of the other components. Basically, a comparison would be like if this were a sandwich, the rice would be the bread and the other components are the sandwich fillings.

Tapa is marinated in vinegar+ garlic while Tocino has pineapple juice+ vinegar, all plus 24 hours

Bangus is truly a very tasty fish i love it cooked spanish style like canned sardines. But bangus is a farmed fish and its illegal to catch wild bangus, its a very bony fish and it takes a lot of prep to have deboned to serve it the way it was served to you.

"DMV" stands for DC, Maryland, and Virginia. And, when people say "DMV" it means the city of Washington, DC (the capital city of the United States) and the immediate jurisdictions surrounding Washington, DC in the two states that border the city..which are the states of Maryland and Virginia. So, in essence, "DMV" means the Washington, DC metropolitan area. I hope this helps.

Pro tip when eating SILOG, eat meats with the rice and then chase it with egg... to get maximum flavor. also just slightly dip in vinegar don't soak it... lastly you should have tasted the ketchup first, theres a high chance that ketchup is filipino ketchup and Filipino ketchup is made out of bananas not tomatoes...

Thanks for the tips. Eating the meats with some rice at the same time makes a lot of sense. And, then, chasing it with egg. And, yes...I"ll have to make sure not to dunk but to dip when applying the vinegar.

I didn't realize it at the time. But, yeah, it's highly likely that the ketchup was Filipino banana ketchup. And, that's really a ketchup that I haven't eaten. I have not had opportunity to eat banana ketchup.
